Resumo: | One hundred and eight water samples were collected of instruments sterilizers in bovines slaughter room of two meat industries with S.I.F. in Goiânia-GO. The samples were microbiological analyzed in the Plate Count Agar (P.C.A.) after they were collected in the beginning, half and ultimate stages of knock travels. During the knock travels the water temperature was measured at one hour intervals, showing variations that reached lower levels permitted according the law. The results of microbiological analysis were not significant. |

During the knock travels the water temperature was measured at one hour intervals, showing variations that reached lower levels permitted according the law. The results of microbiological analysis were not significant. Foram colhidas 108 amostras de água de esterilizadores de instrumentos em salas de matança de estabelecimentos de abate de bovinos com S.I.F. localizados no município de Goiânia - GO. As amostras foram microbiologicamente analisadas utilizando Ágar Padrão para contagem após serem colhidas no início, no meio e ao final dos trabalhos de abate. Durante estes trabalhos, foi mensurada a temperatura da água com intervalos de uma hora cada um. Os resultados demonstraram variações na temperatura da água, a níveis abaixo do permitido na legislação.
