MODELAGEM DAS ISOTERMAS DE DESSORÇÃO E DO CALOR ISOSTÉRICO DE SEMENTES DE CROTALÁRIA

Resumo: | A manutenção da qualidade de sementes de crotalária (Crotalaria spectabilis Roth) por meio do equilíbrio higroscópico é uma forma de conhecer os níveis de teor de água seguros ao armazenamento. Desta forma, objetivou-se determinar as isotermas de dessorção de água das sementes de crotalária nas temperaturas de 5, 10, 15, 25 e 40 °C e atividades de água entre 0,204 e 0,877 (decimal), bem como obter os valores do calor isostérico de dessorção em função do teor de água de equilíbrio do produto. Para obtenção do teor de água de equilíbrio foi utilizado o método estático-gravimétrico. O modelo de Chung-Pfost foi o melhor modelo recomendado para representar a higroscopicidade das sementes de crotalária, cujos teores de água recomendados para o armazenamento seguro são de, no máximo, 21,8; 21,5; 21,2; 20,6 e 19,8% (base seca, b.s.), para as respectivas temperaturas de 5, 10, 15, 25 e 40 °C. O calor isostérico integral de dessorção aumenta com a redução do teor de água, ocorrendo incremento da energia necessária para a remoção de água do produto.Palavras-chave: Crotalaria spectabilis Roth; higroscopicidade; teor de água de equilíbrio. The equilibrium moisture content was obtained using the static-gravimetric method. Chung-Pfost was the best model recommended to represent the hygroscopicity of sunn hemp seeds. The recommended moisture contents for safe storage of sunn hemp seeds are not more than 21.8, 21.5, 21.2, 20.6 and 19.8% (dry basis, d.b.) for the respective temperatures of 5, 10, 15, 25 and 40 °C.
