Controle químico pós-colheita de podridão parda e seu efeito nas características físico-químicas e sensoriais de pêssego Eldorado in natura

Resumo: The objective of this work was to assess the efficiency of the products dichloran, chlorine dioxide, brassinolide, melaleuca oil and chlorhexidine digluconato on the post-harvest control of Monilinia fructicola and their influence on physicochemical and sensorial characteristics of 'Eldorado' peach fruits, stored for two and four days at environmental conditions (20±2°C and 65-70% RH). Peach fruits harvested in incipient maturation stage, selected by size, and without presence of lesions. They were artificially inoculated with spores of Monilinia fructicola, at the ratio of 2x105 conidia per millilitre (2x105 conidium.mL1). It was tested the following treatments: T1 - Control (disinfestation + inoculation); T2 - T1 and Dicloran; T3 - T1 and chlorine dioxide (ClO2); T4 - T1 and Brassinolide; T5 - T1 and melaleuca oil; T6 - T1 and Chlorhexidine digluconato. After treatment application, all fruits were stored for two and four days at environmental conditions (20±2°C and 65-70% RH), and then it was evaluated the physicochemical and sensorial characteristics. For the physical and chemical analysis, it was used a completely randomized design with 4 replications with 20 fruits per plot, and for the sensorial characteristics it was used a randomized block design with four replications. Each block was correspondent to 20 fruits per treatment. Subsequently, the results of each sensorial characteristic were submitted to analysis of variance, Duncan's multiple range test (p ≤ 0.05), Pearson s Correlation and multivariate analysis - ACP (Analysis of Key Components). Except for the physicochemical characteristics such as pH and titratable acidity (TA), the other characteristics had statistical differences regarding treatments and fruits storage times. Therefore, it is concluded that the products dichloran, brassinolide and melaleuca oil are effective at controlling brown rot (Monilinia fructicola) in peach fruits 'Eldorado' after four days of storage at environmental storage (20±2°C and 65-70% RH); and peaches 'Eldorado' treated with dichloran, brassinolide and melaleuca oil exhibit physicochemical and sensorial variations that not compromise the quality for in natura consumption, whether stored for four days at environmental conditions (20±2°C and 65-70% RH).

Sendo assim, pêssegos colhidos no estádio de maturação incipiente, selecionados por tamanho, sem presença de lesões foram inoculados artificialmente com esporos de Monilinia fructicola na razão de 2 x 105 conídios por mililitro (2 x 105 conídios.mL1). Testou-se os seguintes tratamentos: T1 - Controle (desinfestação + inoculação); T2 - T1 e Dicloran; T3 - T1 e Dióxido de cloro (ClO2); T4 - T1 e Brassinolide; T5 - T1 e Óleo melaleuca; T6 - T1 e Digluconato de clorexidina. Após a aplicação dos tratamentos, todos os pêssegos foram armazenados durante dois e quatro dias em ambiente (20±2ºC e 65-70% de UR), sendo avaliadas as características físico-químicas e sensoriais dos frutos. Para as características físico-químicas, utilizou-se o delineamento experimental inteiramente casualizado com 4 repetições de 20 frutos por tratamento, em cada tempo de avaliação e, para as características sensoriais, utilizou-se o delineamento de blocos casualizados, cada bloco correspondente a uma repetição de 20 frutos por tratamento. Posteriormente, os resultados de cada característica sensorial foram submetidos a análise da variância, médias comparadas pelo teste de Duncan (p ≤ 0,05), correlação de Pearson e análise multivariada ACP (Análise de Componentes Principais). Com exceção das características físico-químicas pH e acidez titulável (AT), as demais apresentaram variação estatística em função dos tratamentos e tempos de armazenamento dos frutos.
