Resumo: The cupuaçu (Theobroma grandiflorum Schum) has been grown commercially in southern Bahia as an alternative to the diversification of the regional horticulture. However, due to seed propagation, the plants show great variability in production and fruit quality. The fruits have variations on format and size, according to known morphological descriptors. The objective of this study is to evaluate the physical, chemical and physical characteristics, and pulp yield cupuaçus with different shapes (round, elliptical, obovate, oblong and ovate) produced in southern Bahia. Fruits were collected in two orchards in the municipality of Ilheus, BA, and grouped according formats. We used a completely randomized design with five treatments (fruit shape), six repetitions (trials) and 15 fruits per experimental unit. There were no significant differences with respect to fruits, on the main parameters related to the industrial yield (pulp yield, total soluble solids, titratable acidity), and means were equal to 1,305 g for fruit weight, 37.40% for pulp yield, 13.61 ° Brix total soluble solids, 3.02% for titratable acidity and pH 3.11.

Entretanto, devido à propagação seminal, as plantas apresentam grande variabilidade na produção e na qualidade dos frutos. Os frutos apresentam variações quanto ao formato e tamanho, segundo descritores morfológicos conhecidos. O objetivo deste trabalho é avaliar as características físicas, físico-químicas e rendimento de polpa de cupuaçus com diferentes formatos (redondo, elíptico, obovado, oblongo e ovado) produzidos no sul da Bahia. Os frutos foram coletados em dois pomares do município de Ilhéus, BA, e agrupados de acordo os formatos. Utilizou-se o delineamento experimental inteiramente casualizado com cinco tratamentos (formato dos frutos), seis repetições (coletas) e 15 frutos por unidade experimental.
