Physicochemical quality of fluid milk commercialized in the southeast of the State of Para

Resumo: Exposure to environmental contaminants, temperature elevation or obtaining milk inappropriately may compromise the quality of final product. The objective of this research was to evaluate the physicochemical quality of fluid milk retailed in Parauapebas, State of Para. Samples of raw and pasteurized milk were collected every week for three months – a total of 60 samples of raw milk and 12 samples of pasteurized milk. Titrable acidity, cryoscopic index, fat, protein, total solids (TS), nonfat solids (NFS) were determined and the reduction test of methylene blue, phosphatase and peroxidase was carried out. Variables were compared using non-parametric Kruscall-Wallis analysis through SAS. Cryoscopic index, titrable acidity, NFS and TS differed from the required standards for raw milk. For type C pasteurized milk, the following analyses showed higher non-standard percentage: pasteurization, cryoscopic index, DSE and protein. In some physical and chemical parameters evaluated, the raw or pasteurized milk analyzed did not reach the requirements for the normative instruction #51 (NI 51). Awareness and surveillance policies need to be imposed on the farmers from the rural southeastern region of the State of Para.

Awareness and surveillance policies need to be imposed on the farmers from the rural southeastern region of the State of Para.   O leite, quando submetido à exposição dos contaminantes ambientais e à elevação da temperatura, ou mesmo quando a obtenção do produto dá-se de forma inadequada, pode ter comprometida a qualidade do produto final. Nesse sentido, tem-se por objetivo avaliar a qualidade físico-química do leite fluido comercializado no município de Parauapebas‑PA. As amostras dos leites cru e pasteurizado tipo C foram coletadas uma vez por semana durante três meses contínuos, sendo doze amostras em cada ponto de venda, totalizando 60 amostras do leite comercializado cru e 12 amostras do leite pasteurizado. Determinaram-se as seguintes características: acidez titulável; índice crioscópico; gordura; proteína; extrato seco total (EST) e desengordurado (ESD); teste de redução do azul de metileno; fosfatase, e peroxidase. Para a comparação das variáveis estudadas, foi utilizada a análise não paramétrica de Kruscall-Wallis por intermédio do SAS. As análises físico-químicas cujos resultados estiveram em desacordo com os padrões exigidos para o leite cru foram: índice crioscópico, acidez titulável, ESD e EST. Para o leite pasteurizado tipo C, as análises de pasteurização, índice crioscópico, ESD e proteína apresentaram maior percentual fora do padrão. O leite comercializado cru ou pasteurizado não atende às exigências da IN 51 em alguns parâmetros físico-químicos avaliados.
