Resumo: Brazil has excelled in the agricultural sector, especially in the Northeast of the country, where goat raising is a source of income for innumerous families. The reality in most of the small cities is that the marketing of goats has an informal configuration, which can compromise the microbiological quality of the meat. The goal of this work was to analyze the microbiological quality of the fresh goat meat sold in the Public Market in the city of Santa Cruz-RN. Analysis of mesophilic aerobic bacteria, Staphylococcus aureus, total Coliforms, thermotolerant and E. coli and Salmonella spp were done. The results achieved demonstrated that all the samples showed contamination by mesophilic aerobic bacteria. In all samples the results found for Staphylococcus aureus were negative. In 100% of them the presence of contamination by total Coliforms, thermotolerant and E. coli was identified and 50% by Salmonella spp. With the results, it is possible to see that the goat meat marketed in the Public Market in the city of Santa Cruz-RN presents a risk to the consumers' health. That way, the intervention of supervisory bodies is necessary to improve the sanitary conditions of the marketed product.

A realidade da maior parte dos pequenos municípios é que a comercialização de caprinos tem uma configuração informal, o que pode comprometer a qualidade microbiológica da carne. Este trabalho teve por objetivo analisar a qualidade microbiológica da carne de caprinos in natura comercializadas no Mercado Público do Município de Santa Cruz – RN. Para tal, foram realizadas análises de bactérias aeróbias mesófilas, Staphylococcus aureus, Coliformes totais, termotolerantes e E. coli, e Salmonella spp. Os resultados obtidos demonstraram que todas as amostras apresentaram contaminação por bactérias aeróbias mesófilas. Em todas as amostras os resultados encontrados para Staphylococcus aureus foram negativos. Em 100% delas identificou-se a presença de contaminação por Coliformes totais, termotolerantes e E. coli e 50% por Salmonella spp. Diante dos resultados, pode-se perceber que a carne de caprino comercializada no Mercado Público do município de Santa Cruz – RN apresenta risco à saúde do consumidor.
