Resumo: Zingiber officinale Roscoe (Zingiberaceae) is a species widely used by traditional medicine because of its therapeutic properties, mainly related to secondary metabolites [6]-gingerol, [8]-gingerol, [10]-gingerol and [6]-shogaol. [6] -shogaol, a degradation product of [6] -gingerol, is mainly found when ginger is subjected to high temperatures. According to some authors, this substance has biological activities superior to [6]-gingerol, and therefore presents greater potential as a prototype for the search of new drugs. Thus, the objective of the work is to optimize the extraction of [6]-shogaol from the rhizomes of Z. officinale using ethanol as solvent extractor. The extractions were carried out in the presence of a catalyst (p-toluenesulfonic acid), using techniques: Soxhlet (90°C, 2 h), microwave (60 s), ultrasound (50 °C, 60min), maceration 2 h), and the associations microwave / Soxhlet and ultrasound / Soxhlet. To evaluate the extraction efficiency of each process, the amount of [6] - shogaol (mg/g dry ginger) was determined by HPLC. The most efficient extraction process for obtaining [6]-shogaol was the soxhlet, used for the optimization, using factorial design 32, with temperature, extraction time, type of solvent and mass of catalyst, as study variables. The results indicated that the catalyst mass (100 mg) and extraction time (24 hours) positively affected the yield of [6]-shogaol, favoring the formation of [6]-shogaol from [6]-gingerol (1.86 mg/g).

O [6]-shogaol, um produto de degradação do [6]-gingerol, é encontrado principalmente quando o gengibre é submetido a altas temperaturas. Segundo alguns autores, esta substância apresenta atividades biológicas superiores ao [6]- gingerol, e por isso apresenta maior potencial como protótipo para a busca de novos fármacos. Desta forma, o objetivo do trabalho é otimizar a extração de [6]-shogaol a partir dos rizomas de Z. officinale utilizando etanol como solvente extrator. As extrações foram realizadas na presença de catalisador (ácido p-toluenossulfônico), utilizando as técnicas: Soxhlet (90°C, 2 h), micro-ondas (60 s), ultrassom (50°C, 60 min), maceração (2 h), e as associações micro-ondas/Soxhlet e ultrassom/Soxhlet. Para avaliar a eficiência de extração de cada processo, a quantidade de [6]-shogaol (mg/g de gengibre seco) foi determinada por CLAE. O processo de extração mais eficiente na obtenção do [6]-shogaol foi o soxhlet, utilizado para a otimização,utilizando o planejamento fatorial 32, com temperatura, tempo de extração e massa de catalisador, como variáveis do estudo.
