Physical-chemical and microbiological evaluation of coconut waters produced in the city of Juazeiro do Norte, Ceará

Resumo: | Objective: The objective of this study was to carry out an investigation of the quality of coconut waters produced in the city of Juazeiro do Norte, Ceará, at the physical-chemical and microbiological level, and to verify whether they are in accordance with the current legislation (Nº 27, of 22 July 2009). Methods: Three different brands were used in this study, where they were called A, B and C, of the potted and cooled type. Total titratable acidity, pH, total soluble solids, reducing sugars and the presence of some microorganisms (Salmonella sp., Escherichia coli, Molds and yeasts) were analyzed. Results: The physical-chemical analyzes showed that the pH of all samples is above the allowed limit, since the total soluble solids fit the standard, the values of total titratable acidity and reducing sugars are below the values mentioned in the literature. The results of qualitative microbiological analyzes show that all microorganisms mentioned above are present in all samples. Conclusion: Finally, it is concluded that all samples are unsatisfactory, as they are not following good manufacturing practices, thus requiring more rigid control. |

Métodos: Três marcas diferentes foram utilizadas neste estudo, onde foram denominadas de A, B e C, do tipo envasadas e resfriadas. Foram analisados acidez total titulável, pH, sólidos solúveis totais, açúcares redutores e presença de alguns microrganismos (Salmonella sp., Escherichia coli, Bolores e leveduras). Resultados: As análises físico-químicas demostraram que o pH de todas as amostras estão acima do limite permitido, já os sólidos solúveis totais se enquadraram na normatização, os valores de acidez total titulável e de açúcares redutores encontram-se abaixo dos valores mencionados na literatura. Os resultados das análises microbiológicas qualitativas mostram que há presença de todos os microrganismos antes citados em todas as amostras.
