Associação entre sujidade da pele de bovinos e contaminação cruzada em um abatedouro-frigorífico da região do Triângulo Mineiro, Minas Gerais

The assessment of the hygiene and quality of products of animal origin, such as bovine cattle, is a high quality product and is one of the most important for public health. Evaluations can be done by enumerating some micro-organisms that indicate hygiene. Among them are the mesophilic aerobes, coliforms and Escherichia coli. For this reason, the present study had as objective the impact of bovine skin suppression on cross contamination in one of them located in Triângulo Mineiro - Minas Gerais. Samples were collected from 67 carcasses, which were classified into three categories of dirt: 0-0 (clean carcass next to animal with clean skin), 0-1 (clean carcass next to animal with a small dirty skin) and 0 -2 (carcass next to an animal with very dirty skin). The rubbers were made on clean carcasses (0) and at two points on the cut line: point A (after skinning) and point B (after carcass washing). Analyzed for counting of Mesophilic Aerobes (AM), carcass classification according to EC 1441/2007 and presence and absence of E. coli and Total Coliforms. As the means of AM scores show increasing in all categories and in both points and according to the classification of EC 1441/2007 most of the categories presented favorable to the point to all the categories. At point B 0-0, which had a majority of the carcasses unacceptable. (0.00 and 0-2) (0.0045) and for the 0-0 group between the two accredited points (p = 0.0045). In the analysis of presence and absence of EC and CT, no point had the same order of the two microorganisms 5.5% (0-1) and 20% (0-2), and no B point was 5.5% (0 -1) and 20% (0-2) for EC and from 27.7 (0-1) to 30% (0-2) for CT. It was concluded that there was an impact of cross contamination in relation to the dirtiness of the skin by the greater care in its removal in relation to the animals with a very dirty skin, causing that the contamination of the layer contained was smaller and not having the same theme in category 0 -0 the increase in contamination was observed until the end of the slaughter line.
