Com isso, a gastronomia enquanto patrimônio cultural adquiriu um papel de importância na valorização e conservação da memória e identidade dos povos. A pesquisa a seguir procura entender o uso turístico do patrimônio cultural gastronômico, a partir de um estudo sobre o Café Sertanejo oferecido na Fazenda Babilônia, localizada em Pirenópolis-GO. O estudo parte de uma abordagem qualitativa e exploratória, onde foram adotadas: a pesquisa bibliográfica, a pesquisa de campo, entrevistas em profundidade e análise de conteúdo, como fontes de dados que permitiram chegar aos resultados da pesquisa. Foram levantadas algumas considerações a cerca do uso turístico desse patrimônio cultural gastronômico, como o fato da propriedade possuir dois perfis de turistas específicos, os avulsos e os que visitam em grupos, em sua maioria de turismo pedagógico. Os turistas do perfil pedagógico, consequentemente, são os que mais consomem o Café Sertanejo. As entrevistas realizadas deixam evidente uma preocupação com o conteúdo histórico e cultural da Fazenda como um todo, não apenas com relação ao Café Sertanejo. Thus, the gastronomy as a cultural heritage acquired a role of importance in the development and preservation of memory and identity of people. The study then seeks to understand the tourist use of gastronomic cultural heritage, from a study of the Café Sertanejo offered in Fazenda Babilônia, located in Pirenópolis-GO. The study is a qualitative and exploratory approach, which was adopted: a literature review, field research, interviews and analysis of content, such as data sources that have resulted to the search results. Considerations have been raised about the tourist use of this gastronomic cultural heritage, such as the fact that the property has two specific tourist profiles, unbundled and those visiting in groups, mostly educational tourism. Tourists pedagogical profile consequently are the most consume Café Sertanejo. The interviews show clearly a concern for the historical and cultural content of Finance as a whole, not only with respect to the Café Sertanejo.
