Além disso, uma estimativa feita pela World Food Travel Association (WFTA, 2016), 80% dos viajantes acreditam que comer e beber ajudam na compreensão da cultura local de um destino. O padrão de consumo está em constante modificação e nesse processo percebe-se que o turismo gastronômico vem sendo valorizado. Na busca por procura por materiais que trabalhassem com o turismo gastronômico o Relatório Global da United Nation World Tourism Organization (UNWTO) sobre Turismo Gastronômico foi encontrado e, por se tratar de um documento de uma organização mundial oficial foi decidido que a primeira análise do turismo gastronômico partiria dali. O objetivo geral é analisar o cenário do turismo gastronômico, tanto teoricamente quanto empiricamente, a partir destes relatórios. Esta pesquisa é parte de uma metodologia qualitativa e descritiva, e utilizou-se do método de análise de dados secundários e análise documental nos dois Relatórios Globais em Turismo Gastronômico, feitos pela Organização Mundial do Turismo. Ao fim se chegou à conclusão que o turismo pode contribuir de maneira importante para os objetivos de desenvolvimento sustentável, para isso é necessário definir políticas e estratégias de negócios para o desperdício de alimentos, fortalecimento da comunidade e criação de empregos. In addition, an estimate made by the World Food Travel Association (WFTA, 2016), 80% of travelers believe that eating and drinking help in understanding the local culture of a destination. The pattern of consumption is constantly changing and in this process, it is perceived that gastronomic tourism has been valued. In the quest for materials that worked with gastronomic tourism, the United Nations World Tourism Organization (UNWTO) Global Report on Gastronomic Tourism was found, and because it was a document from an official world organization, it was decided that the first analysis of tourism gastronomic would take place from there. The general objective is to analyze the scenario of gastronomic tourism, both theoretically and empirically, from these reports. This research is part of a qualitative and descriptive methodology, and it was used the method of analysis of secondary data and documentary analysis in the two Global Reports in Gastronomic Tourism, made by the World Tourism Organization. Finally, it was concluded that tourism can contribute significantly to the goals of sustainable development, so it is necessary to define policies and business strategies for food wastage, community strengthening and job creation.
