Introduction: Latin America presents a scenario of historical inequality in ensuring Food and Nutritional Security. In the face of COVID-19, Latin American countries have had their political, economic, social, and health crises exacerbated alongside changes in food systems and environments. Objective: To understand and systematize scientific evidence on the food and nutritional security of Latin American food systems and environments in the context of the COVID-19 pandemic. Methods: This is a narrative literature review conducted through bibliographic research in the PubMed, SciELO, LILACS, and Scopus databases, using the keywords: "Food system", "Food environment", "Food insecurity", "Food security", "COVID-19", "SARS-CoV-2", and "Pandemic". Results: The literature search resulted in the inclusion of 87 studies, which showed in the general characteristics of the studies the predominance of cross-sectional observational studies (58%), published in 2020 (54%), and conducted in Brazil (50%) with national population coverage (76%). With the pandemic, food systems became fragmented regarding the production and distribution of food, highlighting issues related to the lack of incentives for family farming, while food environments emphasized changes in prices, advertising, access, and availability of food, along with the expansion of the virtual food purchasing environment, delivery. Discussion: There is a need for the formulation of strategies and interventions to provide everyone with accessible, sufficient, and quality food. The systematization of the findings pointed to the mitigation of consequences through the reorganization from food production to consumption. In the perspective of possibilities for transitions to more inclusive and sustainable Latin American food systems and environments.
