Physico-chemical analysis of bee honey sold in the municipality of Frei Martinho - PB

Resumo: Honey is a food product produced by honeybees, from the nectar of flowers or from the excretions of plant-sucking insects, which the bees collect, transform, combine with specific substances of their own, store and leave to mature in the combs of the hive. Most of the honeys are offered without registration, control and inspection, which facilitates the tampering of the product. This study aimed to determine and evaluate physicochemical characteristics of honey from bees of the genus Apis melífera produced and marketed in the city of Frei Martinho-PB. The two samples were collected directly from the Boa Sorte apiary in two different periods, January and March 2022. Physicochemical analyzes were carried out on samples 1 and 2, in order to verify acidity, water activity, hydroxymethylfurfural (HMF), humidity, Brix and color. The analyzed samples had water activity, acidity, humidity, Brix within the standard recommended by the literature. The HMF content in the samples was below the maximum recommended value, indicating that there was no adulteration or overheating of the analyzed honeys. Regarding the color, both samples were collected in different periods, and, due to the predominant type of flowering at the time, they have different colors. From the results, it is concluded that the honey is able to be commercialized and consumed.

La mayoría de las mieles se ofrecen sin registro, control e inspección, lo que facilita la manipulación del producto. Este estudio tuvo como objetivo determinar y evaluar las características fisicoquímicas de la miel de abejas del género Apis melífera producida y comercializada en la ciudad de Frei Martinho-PB. Las dos muestras fueron recolectadas directamente del colmenar de Boa Sorte en dos periodos diferentes, enero y marzo de 2022. A las muestras 1 y 2 se les realizaron análisis fisicoquímicos, con el fin de verificar acidez, actividad de agua, hidroximetilfurfural (HMF), humedad, Brix y color. Las muestras analizadas presentaron actividad de agua, acidez, humedad, Brix dentro del estándar recomendado por la literatura. El contenido de HMF en las muestras estuvo por debajo del valor máximo recomendado, lo que indica que no hubo adulteración ni sobrecalentamiento de las mieles analizadas. En cuanto al color, ambas muestras fueron colectadas en diferentes épocas, y debido al tipo de floración predominante en la época, presentan colores diferentes. De los resultados se concluye que la miel está en condiciones de ser comercializada y consumida.O mel é um produto alimentício produzido pelas abelhas melíferas, a partir do néctar das flores ou de excreções de insetos sugadores de plantas, que as abelhas recolhem, transformam, combinam com substâncias específicas próprias, armazenam e deixam maturar nos favos da colmeia. A maioria dos méis são oferecidos sem registro, controle e fiscalização, o que facilita a adulteração do produto. Este trabalho teve como objetivo determinar e avaliar características físico-químicas do mel de abelhas do gênero Apis melífera produzido e comercializado na cidade de Frei Martinho-PB. As duas amostras foram coletadas diretamente do apiário Boa Sorte em dois períodos diferentes, janeiro e março de 2022. Foram realizadas análises físico-químicas nas amostras 1 e 2, a fim de verificar a acidez, atividade de água, hidroximetilfurfural (HMF), umidade, Brix e cor. As amostras analisadas estavam com atividade de água, acidez, umidade, Brix dentro do padrão preconizado pela literatura. O teor de HMF nas amostras estava abaixo do valor máximo preconizado, indicando que não houve adulteração ou superaquecimento dos méis analisados. Referente à cor, ambas as amostras foram coletadas em períodos diferentes, e, devido ao tipo de florada predominante na época, possuem colorações diferentes.
