Quality Index Method applied to the Pangasius bocourti (Sauvage, 1880) (Suriliformes; Pangasidae)

Resumo: In the study, the Quality Index Method (MIQ) adapted for the entire Pangasius bocourti stored on ice for 25 days was applied, the freshness was evaluated and its shelf life and acceptable human consumption was estimated, using 80 specimens caught in a fish farm. located in the municipality of Bom Jardim - MA. Sensory analyzes of quality attributes were applied by five trained judges, in 10 copies/ ay. The scores were tabulated, estimating the mean and standard deviations for each of the five judges, for each attribute and sub-attribute obtained. The microbiological analyzes used eight specimens consisting of the use of the first specimen/day on each day of sensory analysis. The MIQ Protocol provided 0 - 33 demerit points, with six attributes and 15 quality sub-attributes. In the microbiological analyzes it was verified that the samples were within the standard established by Brazilian legislation even after 25 days of storage. It was concluded that the P. bocourti Quality Index Method was effective to assess the freshness and estimate the species' useful life. The whole P. bocourti stored on ice remained with its sensory indexes suitable for human consumption assessed by MIQ for up to 12 days.

Cinco jueces capacitados aplicaron análisis sensoriales de atributos de calidad, en 10 copias/día. Se tabularon las puntuaciones, estimando las desviaciones media y estándar de cada uno de los cinco jueces, para cada atributo y sub-atributo obtenido. Los análisis microbiológicos utilizaron ocho muestras que consisten en el uso de la primera muestra/día en cada día de análisis sensorial. El protocolo MIQ proporcionó 0 a 33 puntos de demérito, con seis atributos y 15 sub-atributos de calidad. En los análisis microbiológicos se verificó que las muestras se encontraban dentro del estándar establecido por la legislación brasileña incluso después de 25 días de almacenamiento. Se concluyó que el Método del Índice de Calidad de P. bocourti fue efectivo para evaluar la frescura y estimar la vida útil de la especie. Todo el P. bocourti almacenado en hielo permaneció con sus índices sensoriales adecuados para el consumo humano evaluados por MIQ hasta por 12 días.No estudo foi aplicado o Método de Índice de Qualidade (MIQ) adaptado para o Pangasius bocourti inteiro armazenado em gelo durante 25 dias, foi avaliado o frescor e estimado seu tempo de vida de prateleira e consumo humano aceitável, utilizando 80 exemplares despescados em uma piscicultura localizada no município de Bom Jardim - MA. Foram aplicadas análises sensoriais de atributos de qualidade por cinco julgadores treinados, em 10 exemplares/dia. Os escores foram tabulados, estimando-se a média e os desvios padrões para cada um dos cinco julgadores, para cada atributo e subatributo obtido. As análises microbiológicas utilizaram oito exemplares consistindo na utilização do primeiro exemplar/dia em cada dia de análise sensorial. O Protocolo MIQ proporcionou de 0 - 33 pontos deméritos, com seis atributos e 15 subatributos de qualidade. Nas análises microbiológicas foi verificado que as amostras se encontravam dentro do padrão estabelecido pela legislação brasileira mesmo após os 25 dias de estocagem. Conclui-se que o Método do Índice da Qualidade do P. bocourti foi eficaz para avaliar o frescor e estimar a vida útil da espécie.
