Respiratory activity and physicochemical quality of juazeiro fruits (Ziziphus joazeiro Mart.)

Resumo: The juazeiro (Ziziphus joazeiro Mart.) is a typical plant from Northeastern Brazil that has edible fruits, with sweet taste and rich in vitamin C. Some research is directed to the physical characterization of these fruits, however, little is known about the their respiratory nature. In this way, the objective was to evaluate the respiratory activity (CO2) and the physicochemical characteristics of juazeiro fruits in different stages of development. For this, fruits in five maturation stages (I, II, III, IV and V) were harvested from plants located at the Center for Science and Agri-Food Technology, at the Federal University of Campina Grande, Campus Pombal-PB, and evaluated according to titratable acidity, pH, soluble solids, ratio, ascorbic acid, total chlorophyll, total carotenoids and respiratory rate. The juazeiro fruits of stage IV maturation obtained low acidity, high levels of soluble solids and ascorbic acid. In the sensory and nutritional aspect, these characteristics are important for fresh consumption and processing. The respiratory rate increased with storage time for all stages of maturation. The fruits of stage IV maturation showed climacteric peak at 16 hours of storage, proposing that juazeiro fruits have a climacteric nature.

Algunas investigaciones se dirigen a la caracterización física de estas frutas, sin embargo, se sabe poco sobre el su naturaleza respiratoria. De esta forma, el objetivo fue evaluar la actividad respiratoria (CO2) y las características fisicoquímicas de los frutos de juazeiro en diferentes etapas de desarrollo. Para esto, se cosecharon frutos en cinco etapas de maduración (I, II, III, IV y V) de plantas ubicadas en el Centro de Ciencia y Tecnología Agroalimentaria, en la Universidad Federal de Campina Grande, Campus Pombal-PB, y se evaluaron de acuerdo con acidez titulable, pH, sólidos solubles, proporción, ácido ascórbico, clorofila total, carotenoides totales y frecuencia respiratoria. Los frutos de juazeiro de maduración en etapa IV obtuvieron baja acidez, altos niveles de sólidos solubles y ácido ascórbico. En el aspecto sensorial y nutricional, estas características son importantes para el consumo y el procesamiento de productos frescos. La frecuencia respiratoria aumentó con el tiempo de almacenamiento para todas las etapas de maduración. Los frutos de maduración en etapa IV mostraron un pico climatérico a las 16 horas de almacenamiento, lo que sugiere que los O juazeiro (Ziziphus joazeiro Mart.) é uma planta típica do Nordeste brasileiro que possui frutos comestíveis, com sabor adocicado e rico em vitamina C. Algumas pesquisas são direcionadas a caracterização física desses frutos, no entanto, pouco se conhece a respeito da sua natureza respiratória. Desta forma, objetivou-se avaliar a atividade respiratória (CO2) e as características físico-químicas dos frutos de juazeiro em diferentes estádios de desenvolvimento. Para isso, frutos em cinco estádios de maturação (I, II, III, IV e V) foram colhidos de plantas localizadas no Centro de Ciências e Tecnologia Agroalimentar, da Universidade Federal de Campina Grande, Campus Pombal-PB, e avaliados de acordo com acidez titulável, pH, sólidos solúveis, ratio, ácido ascórbico, clorofila total, carotenoides totais e taxa respiratória. Os frutos de juazeiro do estádio de maturação IV obtiveram baixa acidez, elevados teores de sólidos solúveis e ácido ascórbico. No aspecto sensorial e nutricional, essas características são importantes para o consumo in natura e para o processamento. A taxa respiratória elevou-se com o tempo armazenamento para todos os estádios de maturação.
