Resumo: The objective of this research was to evaluate the carcass characteristics and meat quality of male and female Lionhead rabbits. Twenty rabbits of both sexes were used, which constituted the treatments. The animals were fed with concentrated, roughage and water at will for 60 days. The animals were weighed weekly until the end of the feeding period, when they were then slaughtered. The adopted statistical design was completely randomized and the Tukey test was applied to evaluate the means. The animals did not show differences for live weight at slaughter (1,499kg); empty body weight (1.00kg); hot (0.798kg) and cold (0.791kg) carcass weight; hot (53.23%) and cold (52.78%) carcass yield. The females had liver weights (75.70g) and gastrointestinal tract (173.90g) higher than those observed in males that were 50.43g and 128.28g, respectively; however, no differences were found for heart, kidney and lung weight. No differences were observed for meat quality variables: pH 0h (6.77) and 24h post-slaughter (5.48); luminosity (49.86), red (4.70) and yellow (5.78); cooking losses (22.26%) and shear force (4.45kgf/cm²). Sex does not influence meat quality and carcass characteristics of Lionhead rabbits. Male and female Lionhead rabbits have potential for meat production purposes, as their carcass characteristics and meat quality make it favorable to trade in meat products.

Se utilizaron veinte conejos de ambos sexos, que constituyeron los tratamientos. Los animales fueron alimentados a voluntad con concentrado, forraje y agua a voluntad durante 60 días. Los animales se pesaron semanalmente hasta el final del período de alimentación hasta el periodo de sacrificio. El diseño estadístico adoptado fue completamente al azar y se aplicó la prueba de Tukey para evaluar las medias. Los animales no mostraron diferencias en peso vivo al sacrificio (1.499kg); peso corporal vacío (1,00kg); peso de la canal caliente (0,798kg) y fría (0,791kg); rendimiento en canal caliente (53,23%) y frío (52,78%). Las hembras tenían pesos del hígado (75,70g) y del tracto gastrointestinal (173,90g) más altos que los observados en los machos, que eran 50,43 g y 128,28 g, respectivamente; sin embargo, no se encontraron diferencias para el peso del corazón, riñón y pulmón. No se observaron diferencias para las variables de calidad de la carne: pH 0h (6,77) y 24h post-sacrificio (5,48); luminosidad (49,86), rojo (4,70) y amarillo (5,78); pérdidas por cocción (22,26%) y fuerza cortante (4,45kgf/cm²). El género no influye en la calidad de la carne ni en las características de la canal de los conejos. Los conejos Lionhead machos y hembras tienen potencial para la producción de carne, ya que las características de su canal y la calidad de la carne la hacen favorable para el comercio de productos cárnicos.Objetivou-se com essa pesquisa avaliar as características de carcaça e qualidade da carne de coelhos machos e fêmeas da raça Lionhead. Foram utilizados 20 coelhos de ambos os sexos, os quais constituíram os tratamentos. Os animais foram alimentados com ração concentrada, volumoso e água à vontade durante 60 dias. Houve pesagem semanal dos animais até o término do período de arraçoamento, quando então, foram submetido ao abate. O delineamento estatístico adotado foi inteiramente casualizado e aplicado o teste de Tukey para avaliação das médias. Os animais não apresentaram diferenças para peso vivo ao abate (1,499kg); peso do corpo vazio (1,00kg); peso da carcaça quente (0,798kg) e fria (0,791kg); rendimento de carcaça quente (53,23%) e fria (52,78%). As fêmeas apresentaram pesos do fígado (75,70g) e trato gastrointestinal (173,90g) superiores àqueles observados nos machos que foram 50,43g e 128,28g, respectivamente; no entanto, não foram verificadas diferenças para peso de coração, rins e pulmões. Não foram observadas diferenças para as variáveis de qualidade da carne: pH 0h (6,77) e 24h pós-abate (5,48); teor luminosidade (49,86), vermelho (4,70) e amarelo (5,78); perdas por cocção (22,26%) e força de cisalhamento (4,45 kgf/cm²). O sexo não influencia na qualidade da carne e características de carcaça de coelhos Lionhead.
