Resumo: Tucumã pulp (Astrocaryum aculeatum Meyer) has high nutritional value and is widely accepted in the northern region of Brazil. However, there are few studies reporting the intrinsic properties and the rate of contamination of these products. The objective of this work was to evaluate the physical-chemical characteristics and the microbiological quality of tucuma pulp commercialized in fairs in the city of Manaus-AM. In this study two samples were acquired from each zone of the city of Manaus, Center-West zone (ZCO), Center-South zone (ZCS), East zone (ZL), North zone (ZN), West zone (ZO), South zone (ZS).  The samples were evaluated for their physical-chemical characteristics (pH, humidity, total soluble solids expressed in ºBrix, titratable acidity expressed in citric acid and ratio). In determining the microbiological quality the presence of Escherichia coli, Salmonella sp. and molds and yeasts were evaluated. The ZCS2 pulp presented a significant quantity of pH (5.14). The average moisture content was 57.28% and the acidity expressed as citric acid ranged from 0.03% to 0.13%. ZL2 showed significant values for total solids (5.13 °Brix) and ratio (128.33). ZCO2, ZS1 and ZL1 pulps showed E.coli counts higher than the Brazilian legislation (10 MPN/g). ZL1 sample showed significant counts of mold and yeast (2.1 x 104 CFU/g). The results obtained in the present study indicate the need for improvements in the control of the sanitary quality of tucumã pulp commercialized in the fairs of the city of Manaus-AM.

Sin embargo, hay pocos estudios que reporten las propiedades intrinsecas y la tasa de contaminación de estos productos. El objetivo de este trabajo fue evaluar las caracteristicas fisico-químicas y la calidad microbiológica de las pulpas de tucumã comercializadas en ferias de la ciudad de Manaus-AM. En este estudio, se adquirieron dos muestras de cada zona de la ciudad de Manaus-AM, que incluyen Zona Centro-Oeste (ZCO), Zona Centro-Sur (ZCS), Zona Leste (ZL), Zona Norte (ZN), Zona Oeste (ZO), Zona Sur (ZS). Las muestras han sido evaluadas para (pH, humedad, sólidos solubles totales expresos en ºBrix, acidez titulable expresada como ácido cítrico y la relación SST/Acidez. En la determinación de la calidad microbiológica, se evaluaron las presencias Escherichia coli, Salmonella sp., mohos y levaduras. La muestra ZCS2 ha presentado cantidad significativa de pH (5,14). La humedad media fue de 57,28% y la acidez expresada como ácido cítrico ha variado de 0,03% a 0,13%. La muestra ZL2 ha demostrado valores significativos de sólidos totales (5,13 °Brix) y relación SST/Acidez (128.33). Las pulpas ZCO2, ZS1 y ZL1 han presentado recuentos más altos que los establecidos por la legislación brasileña (10 NMP/g) y en ZL1 han sido detectados recuentos expresivos de mohos y levaduras (2,1 x 104 UFC/g). Los resultados obtenidos en este presente estudio han indicado la necesidad de mejoras en control de la calidad sanitaria de las pulpas de tucumã comercializadas en ferias de la ciudad de Manaus-AM.A polpa do tucumã (Astrocaryum aculeatum Meyer) possui elevado valor nutricional e tem grande aceitação na região norte do Brasil. Neste estudo foram adquiridas duas amostras de cada zona da cidade de Manaus, Zona Centro-Oeste (ZCO), Zona Centro-Sul (ZCS), Zona Leste (ZL), Zona Norte (ZN), Zona Oeste (ZO), Zona Sul (ZS).  As amostras foram avaliadas quanto as suas características físico-químicas (pH, umidade, sólidos solúveis totais expressos em ºBrix, acidez titulável expressa em ácido cítrico e ratio). Na determinação da qualidade microbiológica foram avaliadas as presenças de Escherichia coli, Salmonella sp., bolores e leveduras. A polpa ZCS2 apresentou quantitativo significativo de pH (5,14). A média de umidade foi de 57,28% e a acidez expressa em ácido cítrico variou de 0,03% a 0,13%. A amostra ZL2 demosntrou valores significativos de sólidos totais (5,13 °Brix) e ratio (128.33). As polpas ZCO2, ZS1 e ZL1 apresentaram contagens de E.coli superiores ao estabelecido pela legislação brasileira (10 NMP/g) e na ZL1 foram detectadas contagens expressivas de bolores e leveduras (2,1 x 104 UFC/g).
