Extraction and quantification of anthocyanins from dehydrated Clitorea Ternatea flowers

Resumo: Clitoria ternatea is a perennial plant of the Fabaceae family used mainly as a forage plant. The flowers can be used in human food, highlighting the high content of anthocyanins and high antioxidant capacity. Dehydration is a process of water removal and one of the main ways used in food preservation. This work aims to dehydrate the flower and compare some attributes with those of commercial dehydrated flowers. The flowers were dehydrated for six hours at 50°C in a forced convection hot air dryer, reaching an average final humidity of 8.39%. The dehydrated commercial flower presented moisture of 18.34%. For both samples, the dye hydroalcoholic extract was obtained, which was concentrated and characterized in terms of anthocyanin content. The anthocyanins content of 10.0 mg/100 ml was obtained for the concentrated coloring extracts obtained from the flowers dried by hot air, while for the concentrated extracts of the commercial dehydrated flowers, a value of 5.23 mg/100 ml was obtained. The cultivation of edible flowers has great potential for expansion and new studies on the ways of using such flowers should contribute to the rational development of cultures that are still little explored, such as Clitoria ternatea, with more studies in the search for solutions to problems such as improving stability and shelf life through drying.

Las flores se pueden utilizar en la alimentación humana, destacando el alto contenido en antocianinas y alta capacidad antioxidante. La deshidratación es un proceso de eliminación de agua y una de las principales formas utilizadas en la conservación de alimentos. Este trabajo tiene como objetivo deshidratar la flor y comparar algunos atributos con los de las flores deshidratadas comerciales. Las flores se deshidrataron durante seis horas a 50°C en un secador de aire caliente de convección forzada, alcanzando una humedad final promedio de 8,39%. La flor comercial deshidratada presentó humedad de 18.34%. Para ambas muestras se obtuvo el extracto hidroalcohólico colorante, el cual fue concentrado y caracterizado en cuanto al contenido de antocianinas. Para los extractos colorantes concentrados obtenidos de flores secadas con aire caliente se obtuvo un contenido de antocianinas de 10,0 mg/100 ml, mientras que para los extractos concentrados de flores deshidratadas comerciales se obtuvo un valor de 5,23 mg/100.ml. El cultivo de flores comestibles tiene un gran potencial de expansión y nuevos estudios sobre las formas de uso de tales flores deben contribuir al desarrollo racional de cultivos aún poco explorados, como Clitoria ternatea, con más estudios en la búsqueda de soluciones a problemas como como cómo mejorar la estabilidad y la vida útil mediante el secado.A Clitoria ternatea é uma planta da família Fabaceae do tipo perene utilizada principalmente como planta forrageira. As flores podem ser usadas na alimentação humana, destacando-se o alto conteúdo de antocianinas e a alta capacidade antioxidante. A desidratação é um processo de remoção de água e uma das principais formas utilizadas na preservação de alimentos. Este trabalho tem como objetivo desidratar a flor e comparar alguns atributos com os de flores desidratadas comerciais. As flores foram desidratadas por seis horas a 50 oC em secador de convecção forçada de ar quente chegando a umidade média final de 8,39 %. A flor desidratada comercial apresentou umidade de 18,34%. Para ambas amostras foi obtido o extrato hidroalcolico corante que foram concentrados e caracterizados quanto ao teor de antocianinas. Para os extratos corante concentrados obtidos das flores desidratadas por ar quente obteu-se como teor de antocianinas 10,0 mg/100 ml, já para os extratos concentrados das flores desidratadas comerciais obteu-se um valor de 5,23 mg/100 ml.
