Resumo: | Edible flowers (PANC), are increasingly used in the preparation of meals, as they have beneficial potential for human health. The nasturtium (Tropaeolum majus) is a flower recognized for its antioxidant properties and high content of phenolic compounds. This study aimed to evaluate the profile of bioactive compounds, nutritional in human health, such as carotenoids, phenolic compounds, flavonoids and anthocyanins, in edible flowers of the species (Tropaeolum majus) through the application of descriptive review methodology. Through this descriptive review, we sought to collect data on the effects of bioactive compounds from Capuchin on the human body. The search for published bibliographies took place in the Scielo, Academic Google and World Wide Science databases between the years 2004 to 2020 using the descriptors "Capuchinha", "bioactive compounds", phenolic compounds", "anthocyanins" and "carotenoids", " Tropaeolum majus”, “edible flowers”, in total there were 27 articles in Portuguese and English. After reading and evaluation, 20 articles were selected. greater use in food due to its functional or sensory characteristics. |

La capuchina (Tropaeolum majus) es una flor reconocida por sus propiedades antioxidantes y alto contenido en compuestos fenólicos. Este estudio tuvo como objetivo evaluar el perfil de compuestos bioactivos, nutricionales en la salud humana, como carotenoides, compuestos fenólicos, flavonoides y antocianinas, en flores comestibles de la especie (Tropaeolum majus) mediante la aplicación de metodología de revisión descriptiva. A través de esta revisión descriptiva, buscamos obtener datos sobre los efectos de los compuestos bioactivos de los capuchinos en el cuerpo humano. La búsqueda de bibliografías publicadas se produjo en las bases de datos Scielo, Academic Google y World Wide Science entre los años 2004 a 2020 a través de los descriptores "Capuchinha", "compuestos bioactivos", compuestos fenólicos "," antocianinas "y" carotenoides "Tropaeolum majus". “Flores comestibles”, en total fueron 27 artículos en portugués e inglés, luego de la lectura y evaluación se seleccionaron 20 artículos de mayor uso en alimentos por sus características funcionales o sensoriales.Flores comestíveis (PANC), são cada vez mais utilizadas no preparo de refeições, pois possuem potencial benéfico à saúde humana. A capuchinha (Tropaeolum majus) é uma flor reconhecida por suas propriedades antioxidantes e alto teor de compostos fenólicos. O presente estudo teve como objetivo avaliar o perfil de compostos bioativos, nutricionais na saúde humana, tais como carotenoides, compostos fenólicos, flavonoides e antocianinas, em flores comestíveis da espécie (Tropaeolum majus) através da aplicação da metodologia de revisão descritiva. Através desta revisão descritiva buscou-se levantar dados sobre os efeitos dos compostos bioativos da Capuchinha no organismo dos seres humanos. A busca de bibliografias publicadas ocorreu nas bases de dados Scielo, Google Acadêmico e World Wide Science entre os anos de 2004 a 2020 através de descritores “Capuchinha”, “compostos bioativos”, compostos fenólicos”, “antocianinas” e "carotenoides", “Tropaeolum majus”, “flores comestíveis", no total foram 27 artigos nos idiomas português e inglês. Após a leitura e avaliação 20 artigos foram selecionados.
