Dietary intake and nutritional status of institutionalized elderlies

Resumo: This study aimed to relate dietary and water intake with nutritional status and dietary recommendations of elderly residents in public and private Long-Term Care Institutions for Elderly in the hinterland of Rio Grande do Sul. This was a quantitative and cross-sectional study, with 245 elderly. A 24-hour food recall questionnaire was applied to evaluate the amount of water, total calories, macronutrients, and fibers consumed, which was calculated using the DietWin® software (version 2969/2008). The mean macronutrients, fibers and water intake found in this population was compared to the reference values of the Dietary References Intakes. The body Mass Index (BMI) was calculated through weight and height, being the nutritional status classified according to the Pan American Health Organization parameters. The software Package for the Social Sciences (SPSS) version 22.0 was used for statistical analysis. The results considered maximum significance level of 5% (p≤ 0.05).  A positive and significant association was found between the total calories consumption and carbohydrates with BMI (r=0.165 and p=0.010; r=0.163 and p=0.011), respectively. The consumption of total calories (p=0.007) and carbohydrates (p=0.006) among the elderly with low weight were significantly lower when compared to the elderly classified with eutrophy, overweight and obesity. Daily water consumption was inversely and significantly associated with age (r=0.168 and p=0.008). It was concluded that the higher the BMI significantly higher was the consumption of total calories and carbohydrates, this consumption being significantly lower among the elderly with low weight.

El estudio fue cuantitativo y transversal, con 245 ancianos. Se aplicó un registro de alimentos de 24 horas de un día de la semana para evaluar la cantidad de agua, las calorías totales, los macronutrientes y las fibras consumidas, y se calculó con el software DietWin® (versión 2969/2008). Se comparó la ingesta media de macronutrientes, fibras y agua de la población evaluada con los valores de referencia de las Ingestas de Referencias Dietéticas. Se calculó el Índice de Masa Corporal (IMC) a través del peso y la estatura, y se clasificó el estado nutricional según los parámetros de la Organización Panamericana de la Salud. Para el análisis estadístico se utilizó el software Statistical Package for the Social Sciences ( SPSS) versión 22.0. Se consideró un nivel máximo de significancia del 5% (p≤0.05). Hubo una asociación positiva y significativa entre el consumo de calorías totales y carbohidratos con el IMC, (r = 0.165 yp = 0.010; r = 0.163 yp = 0.011), respectivamente. El consumo de calorías totales (p = 0,007) y carbohidratos (p = 0,006) entre los ancianos con bajo peso fue significativamente menor, en comparación con los ancianos clasificados como eutróficos, con sobrepeso y obesos. El consumo diario de agua se asoció inversa y significativamente con la edad (r = 0,168 yp = 0,008). Se concluyó que a mayor IMC, significativamente mayor el consumo de calorías totales y carbohidratos, siendo este consumo significativamente menor entre los ancianos con bajo peso.Este estudo objetivou relacionar a ingestão dietética e hídrica com estado nutricional e recomendações dietéticas de idosos residentes em Instituições de Longa Permanência para Idosos públicas e privadas do interior do Rio Grande do Sul. O estudo foi quantitativo e transversal, com 245 idosos. Aplicou-se um recordatório alimentar de 24h de um dia da semana, para avaliar a quantidade hídrica, de calorias totais, macronutrientes e fibras consumidas, e calculado através do software DietWin® (versão 2969/2008). A média de ingestão de macronutrientes, fibras e água da população avaliada foi comparada aos valores de referência das Dietary References Intakes. O Índice de Massa Corporal (IMC) foi calculado através do peso e da altura, sendo o estado nutricional classificado conforme os parâmetros da Organização Pan-Americana da Saúde. Para a análise estatística, utilizou-se o software Statistical Package for the Social Sciences (SPSS) versão 22.0. O consumo de calorias totais (p=0,007) e carboidratos (p=0,006) entre os idosos com baixo peso foram significativamente inferiores, em comparação aos idosos classificados com eutrofia, sobrepeso e obesidade. O consumo hídrico diário associou-se inversa e significativamente com a idade (r=0,168 e p=0,008).
