Geographical indication and “cachaça” quality according to the perception of enjoyers

Resumo: The concept of product quality, from the consumer's point of view, is based on its subjective perceptions. However, in the process of purchasing a product, some quality attributes can be observed, assisting the consumer to make his decision. Among these attributes, seals of geographical indication have been identified as indicators of quality of food products and can be considered by consumers to guide the choice. In order to assess the relevance of quality signs and attributes in the choice of Cachaça, by consumers with a high level of knowledge and a high degree of involvement with the beverage, questionnaires were applied to this audience. The results showed that sensory attributes are the most important parameters for cachaça lovers. However, before tasting the product, factors such as brand, price and marketing are more relevant at the time of purchase. The results showed that geographic origin is not yet a relevant concept for this kind of consumers.

Sin embargo, en el proceso de compra de un producto se pueden observar atributos de calidad, ayudando al consumidor en su toma de decisiones. Entre estos atributos, los sellos de indicación geográfica se han identificado como indicadores de calidad de los productos alimenticios y pueden ser considerados por los consumidores a la hora de realizar su compra. Con el fin de evaluar la relevancia de los signos y atributos de calidad en la elección de la Cachaça, por parte de conocedores con un alto nivel de conocimiento y un alto grado de implicación con la bebida, se aplicaron cuestionarios a este público. Los resultados mostraron que los atributos sensoriales son los parámetros más importantes para los amantes de la cachaça. Sin embargo, antes de probar el producto, factores como la marca, el precio y el marketing son más relevantes en el momento de la compra. Los resultados mostraron que el origen geográfico aún no es un concepto relevante para los consumidores de este nicho de mercado.O conceito de qualidade de um produto, sob o ponto de vista do consumidor, é baseado nas suas percepções subjetivas. No entanto, no processo de aquisição de um produto, atributos de qualidade podem ser observados, auxiliando o consumidor na sua tomada de decisão. Dentre estes atributos, selos de indicação geográfica têm sido apontados como indicadores de qualidade de produtos alimentícios podendo ser considerados pelos consumidores ao realizar a sua compra. Objetivando avaliar a relevância de sinais e atributos de qualidade na escolha da Cachaça, por apreciadores com alto nível de conhecimento e elevado grau de envolvimento com a bebida, foram aplicados questionários a esse público. Os resultados mostraram que os atributos sensoriais são os parâmetros mais importantes para os apreciadores de cachaça. No entanto, antes da degustação do produto, fatores como marca, preço e marketing têm maior relevância no momento da compra.
