Effect of gamma irradiation on the technological properties of mixed starch of turmeric´s primary and secondary rhizomes

Resumo: This study aimed to evaluate the effect of irradiation on technological properties of mixed starches extracted from primary and secondary rhizomes of turmeric. Was used Mara Rosa city´s tumeric, Goiás State, for the extraction of mixed starches by the method of decanting. The extracted starches were subjected to radiation doses of 2.5, 5 and 10kGy, except the control was not irradiated. Subsequently, they were subjected to the following tests: scanning electron microscopy; thermal properties; X-ray diffraction; swelling power and solubility in water. The irradiation did not influence the morphology of the starch granules, however, it may have caused changes in molecular level. The starches irradiated and control showed B type diffraction pattern, irradiation decreased the crystallinity of treated starches, but increased in the sample irradiated with 5kGy. The gelatinization temperatures of the samples were not affected by irradiation, however, reduced the enthalpy of gelatinization of the irradiated starches. The water solubility increased with increasing radiation dose. The swelling power of the irradiated samples was reduced compared to control. Technological changes induced by gamma irradiation allow the mixed starch potential applications in the food industries.

Se utilizó cúrcuma de la ciudad de Mara Rosa, Goiás, para extraer el almidón mixto por el método de decantación. Los almidones extraídos fueron sometidos a dosis de radiación de 2,5, 5 y 10 kGy, excepto el control. Posteriormente, fueron sometidos a los siguientes análisis: microscopía electrónica de barrido; propiedad térmica; Difracción de rayos X; poder de hinchamiento y solubilidad en agua. La irradiación no influyó morfológicamente en los gránulos de almidón, sin embargo, pudo haber causado cambios a nivel molecular. Los almidones irradiados y el control mostraron un patrón de difracción tipo B. La irradiación disminuyó la cristalinidad de los almidones tratados, pero aumentó en la muestra irradiada con 5 kGy. Las temperaturas de gelatinización de las muestras no se vieron afectadas por la irradiación, sin embargo, las entalpías de gelatinización de los almidones irradiados se redujeron. La solubilidad en agua aumentó con el aumento de la dosis de radiación. El poder de hinchamiento de las muestras irradiadas se redujo en relación al control. Los cambios tecnológicos inducidos por la radiación gamma permiten aplicaciones potenciales de almidón mixto en la industria alimentaria.O estudo objetivou avaliar o efeito da irradiação nas propriedades tecnológicas dos amidos mistos extraídos de rizomas primário e secundário de cúrcuma. Foi utilizada a cúrcuma da cidade de Mara Rosa, Goiás, para extração do amido misto por meio do método de decantação. Os amidos extraídos foram submetidos às doses de radiações de 2,5, 5 e 10 kGy, exceto o controle. Posteriormente, foram submetidos às seguintes análises: microscopia eletrônica de varredura; propriedade térmica; difração de raio-X; poder de inchamento e solubilidade em água. A irradiação não influenciou morfologicamente os grânulos do amido, no entanto, pode ter causado mudanças no nível molecular. Os amidos irradiados e o controle apresentaram padrão de difração do tipo B. A irradiação diminuiu a cristalinidade dos amidos tratados, mas aumentou na amostra irradiada com 5 kGy. As temperaturas de gelatinização das amostras não foram afetadas pela irradiação, entretanto, as entalpias de gelatinização dos amidos irradiados foram reduzidas. A solubilidade em água aumentou com a elevação da dose da radiação. O poder de inchamento das amostras irradiadas foi reduzido em relação ao controle.
