Quality of tomato fruits in protected growth

Resumo: | The tomato, widely distributed around the world, is one of the main oleraceae species, being considered the second vegetable in volume of production and consumption. Thus, research on crop conduction systems and post-harvest studies becomes essential. In this sense, the objective was to analyze the quality of tomato produced in a protected environment in the region of Alta Paulista/SP. The experiment was carried out at the Regional Unit for Research and Development of Adamantine of APTA Regional, in Adamantina/SP, year 2021. "Italiano" tomato seed of determined growth was used. The fruits were divided into “commercial (table)” or “disposal (agro-industrial processing)”. Fresh mass (g), fruit height and mean diameter (mm), soluble solids (oBrix) and fruit utilization (%) were evaluated. A completely randomized design was used with two treatments and 8 replications. The data were submitted to analysis of variance for the F test and the means were compared by the Tukey test at a 5% significance level. A significant difference was observed for all variables, with the exception of soluble solids. Fresh mass, height and fruit utilization were the items with the greatest quantitative variations, respectively. The fruits classified as “discard” showed a percentage of utilization of 85.25±5.82. This result showed that the production classified as "discard" can be sold for consumption in natura at a lower price compared to the fruits selected for the table. It can also be used for family consumption (as a sauce). It was concluded that, under the conditions in which the work was carried out, the “Italiano” tomato evaluated in a protected environment in Alta Paulista/SP proved to be suitable for consumption for the table and agro-industrial processing, thus being recommended for commercial cultivation. |

En ese sentido, el objetivo fue analizar la calidad del tomate producido en ambiente protegido en la región de Alta Paulista/SP. El experimento fue realizado en la Unidad Regional de Investigación y Desarrollo de Adamantina de APTA Regional, en Adamantina/SP, año 2021. Se utilizó semilla de tomate "Italiano" de crecimiento determinado. Los frutos se dividieron en “comercial (mesa)” o “destino (procesamiento agroindustrial)”. Se evaluó masa fresca (g), altura y diámetro medio de fruto (mm), sólidos solubles (oBrix) y rendimiento de fruto (%). Se utilizó un diseño completamente al azar con dos tratamientos y 8 repeticiones. Los datos fueron sometidos a análisis de varianza por la prueba F y las medias fueron comparadas por la prueba de Tukey al 5% de nivel de significancia. Se observó una diferencia significativa para todas las variables, con excepción de los sólidos solubles. Masa fresca, altura y aprovechamiento de frutos fueron los ítems con mayores variaciones cuantitativas, respectivamente. Los frutos clasificados como “descarte” presentaron un porcentaje de aprovechamiento de 85,25±5,82. Este resultado mostró que la producción clasificada como “descarte” puede venderse para consumo in natura a un precio menor en comparación con los frutos seleccionados para la mesa. También se puede utilizar para el consumo familiar (como salsa). Se concluyó que, en las condiciones en que fue realizado el trabajo, el tomate “Italiano” evaluado en ambiente protegido en Alta Paulista/SP demostró ser apto para el consumo para la mesa y procesamiento agroindustrial, siendo así recomendado para cultivo comercial.O tomate, amplamente distribuído pelo mundo, é uma das principais espécies oleráceas, sendo considerado a segunda hortaliça em volume de produção e consumo. Utilizou-se o delineamento experimental inteiramente casualizado com dois tratamentos e 8 repetições. Os dados foram submetidos à análise de variância para o teste F e as médias comparadas pelo teste de Tukey ao nível de 5% de significância. Observou-se diferença significativa para todas as variáveis, com exceção dos sólidos solúveis. A massa fresca, altura e aproveitamento dos frutos foram os itens com maiores variações quantitativas, respectivamente. Os frutos classificados como “descarte” apresentaram percentual de aproveitamento de 85,25±5,82. Esse resultado mostrou que a produção classificada como “descarte” pode ser vendida para consumo in natura com preço inferior em relação aos frutos selecionados para mesa. Podendo, ainda, ser usado para consumo familiar (como aproveitamento para molho).
