Resumo: This article is a bibliographic research and aims to evaluate the occupational risks of Brazilian slaughterhouses based on the requirements established in the Regulatory Norm that deals with Safety and Health at Work in slaughterhouses and meat and derivatives processing - NR 36-, in order to establish preventive measures. This research derives from the data collected on the Labor Inspection portal that deal with the themes of work accidents and studies of the environments in the activities of the meatpacking industries. The activities with slaughter and meat derivatives are of great economic importance for Brazil, as well as constituting a high rate of work accidents correlated to inadequate conditions in these working environments. It is concluded that the safety deviations found in these working environments must be reduced or eliminated through uninterrupted prevention and control measures that can reduce overtime, the pace of work harmful to the health of the employee, errors in the identification and information of agents and risks in the workplace and failures in the use of personal protective equipment (PPE), instruments and machines. It is essential that companies comply with the legislation that ensures safety and health at work and the increase of state supervision, so that there is an advance in safety and health in these work spaces.

It is essential that companies comply with the legislation that ensures safety and health at work and the increase of state supervision, so that there is an advance in safety and health in these work spaces.Este artículo es una investigación bibliográfica y tiene como objetivo evaluar los riesgos laborales de los mataderos brasileños con base en los requisitos establecidos en la Norma Reguladora que trata de la Seguridad y Salud en el Trabajo en los mataderos y procesamiento de carne y derivados - NR 36 -, con el fin de establecer medidas de prevención. Esta investigación se deriva de los datos recopilados en el Portal de Inspección del Trabajo que tratan de temas de accidentes de trabajo y estudios de los ambientes en las actividades de las industrias frigoríficas. Las actividades con matanza y derivados cárnicos son de gran importancia económica para Brasil, aunque aporten un alto índice de accidentes de trabajo correlacionados con condiciones inadecuadas en esos ambientes de trabajo. Se concluye que las desviaciones de seguridad encontradas en estos ambientes de trabajo deben ser reducidas o eliminadas a través de medidas de prevención y control ininterrumpidas que puedan reducir las horas extras, el ritmo de trabajo nocivo para la salud del trabajador, los errores en la identificación e información de los agentes y de los riesgos en el lugar de trabajo y fallas en el uso de equipos de protección personal (EPP), instrumentos y máquinas. Es fundamental que las empresas cumplan con la legislación que vela por la seguridad y salud en el trabajo y el aumento de la supervisión estatal, para que haya un avance en seguridad y salud en estos espacios de trabajo.O presente artigo de natureza bibliográfico, tem como objetivo avaliar os riscos ocupacionais dos frigoríficos brasileiros com base nos requisitos estabelecidos na Norma que trata da Segurança e Saúde no Trabalho em empresas de abate e processamento de carnes e derivados - NR 36-, a fim de estabelecer as medidas de prevenção. A realização desta pesquisa deriva dos dados coletados no portal da Inspeção do trabalho, artigos com as temáticas de acidentes de trabalho e estudos dos ambientes nas atividades das indústrias frigoríficas. As atividades com abates e derivados de carne têm grande importância econômica para o Brasil, porém constitui um índice elevado de acidentes do trabalho correlacionadas às condições inadequadas nestes ambientes laborais. Conclui-se que os desvios de segurança encontrados nestes ambientes laborais devem ser reduzidos ou eliminados através da prevenção ininterrupta e medidas de controle que possam reduzir as jornadas extras, o ritmo de trabalho prejudicial à saúde do colaborador, a falha na identificação e informações dos agentes e riscos nos locais de trabalho, falhas no uso dos EPIs, instrumentos e máquinas.
