Resumo: Malnutrition is a major challenge to be faced in the world, both in high-income, middle-income and low-income countries. Nutrition is influenced by the food systems that are responsible for the production, processing, distribution, preparation and consumption of food. However, food systems do not always provide a safe, high-quality diet for everyone. In addition, such diets are influenced by food environments, which concern the food sources available to consumers. Food environments can influence food choices, since they make food available to consumers. In this context, the work aimed to explain the relationship between the food environment and purchasing behavior. To answer this objective, an exploratory research with a qualitative approach was carried out, in which the methodological procedure used was bibliographic research. The results indicate that the food environment and consumption behavior are components that constitute food systems. These, in turn, correspond to the available food sources that influence people in making a purchase decision. Therefore, even if the individual presents preferences in the food choice process, the food environment will shape their consumption behavior.

La nutrición está influenciada por los sistemas alimentarios que son responsables de la producción, procesamiento, distribución, preparación y consumo de alimentos. Sin embargo, los sistemas alimentarios no siempre proporcionan una dieta segura y de alta calidad para todos. Además, estas dietas están influenciadas por los entornos alimentarios, que se refieren a las fuentes de alimentos disponibles para los consumidores. Los entornos alimentarios pueden influir en la elección de alimentos, ya que ponen los alimentos a disposición de los consumidores. En este contexto, el trabajo tuvo como objetivo explicar la relación entre el entorno alimentario y el comportamiento de compra. Para responder a este objetivo, se realizó una investigación exploratoria con enfoque cualitativo, en la que el procedimiento metodológico utilizado fue la investigación bibliográfica. Los resultados indican que el entorno alimentario y el comportamiento de consumo son componentes que constituyen los sistemas alimentarios. Estos, a su vez, corresponden a las fuentes de alimentos disponibles que influyen en las personas a la hora de tomar una decisión de compra. Por lo tanto, incluso si el individuo presenta preferencias en el proceso de elección de alimentos, el entorno alimentario determinará su comportamiento de consumo.A má nutrição é um grande desafio a ser enfrentado no mundo, tanto em países de alta, média e baixa renda. A nutrição é influenciada pelos sistemas alimentares que são responsáveis pela produção, transformação, distribuição, preparação e consumo de alimentos. No entanto, nem sempre os sistemas alimentares proporcionam uma dieta segura e de alta qualidade para todos. Além disso, tais dietas são influenciadas pelos ambientes alimentares, que dizem respeito às fontes alimentares disponíveis para os consumidores. Os ambientes alimentares podem influenciar as escolhas alimentares, uma vez que são esses ambientes que disponibilizam os alimentos ao consumidor. Diante desse contexto, o trabalho teve como objetivo explanar sobre a relação do ambiente alimentar com o comportamento de compra. Para responder tal objetivo, foi realizada uma pesquisa exploratória de abordagem qualitativa, em que o procedimento metodológico utilizado foi a pesquisa bibliográfica. Por meio da pesquisa bibliográfica, constatou-se que o ambiente alimentar e o comportamento de consumo são componentes que constituem os sistemas alimentares. Esses, por sua vez, correspondem às fontes alimentares disponíveis e que influenciam as pessoas na tomada de decisão de compra.
