Mycotoxins: risks to human health due to daily ingestion of contaminated food and its occurrence in clinical samples

Resumo: | Toxigenic fungi can produce mycotoxins in food in favorable conditions of temperature and humidity. The daily intake of mycotoxins in food can cause harm to human and animal health. The aim of this study was to verify the exposure of the human organism to mycotoxins and their occurrence in clinical samples. The current study evaluated the risks to human health due to the toxicity caused by mycotoxins when consumed daily in foods, as well as their occurrence in clinical samples. In this bibliographic revision, the articles were selected through a database using combined words to search of main subject, which were recruited 60 papers for the general revision and 20 papers for the data of exposure mycotoxins by the daily intake and mycotoxins in clinical samples. Mycotoxins are often found in foods, including cereals, pulses, fruits and vegetables. They are highly resistant molecules that remain even after processing in the industry, including their by-products. Chronic intoxication can occur in individuals, causing health damage. The mycotoxins found in clinical samples of individuals from a region can help in the knowledge of how much the population is exposed. Thereby, it is possible take preventive measures in order to avoid possible diseases. The mycotoxins exposure has essential importance to public health, once that it may assist in the prevention or reduction of diseases. This review may contribute to instigate new research on the possible relation between mycotoxin exposure and the diseases caused by its interaction with the organism. |

La ingesta diaria de estas micotoxinas en los alimentos puede causar daños a la salud humana y animal. El objetivo de este estudio fue verificar la exposición del organismo humano a las micotoxinas y su aparición en muestras clínicas. En esta revisíon de la literatura, los artículos se seleccionaron a través de una base de datos utilizando palabras conbinadas para buscar el tema principal, se reclutaron 60 artículos para la revisíon general y 20 se seleccionarion para los datos de exposición a micotoxinas y los resultados en muestras clínicas. Las micotoxinas se encuentran en muchos alimentos, desde cereales, legumbres, frutas y verduras. Son moléculas altamente resistentes que permanecen incluso después del procesamiento en la industria, incluidos sus subproductos. La intoxicación crónica puede ocurrir en individuos, causando daños a la salud. El hallazgo de micotoxinas en muestras clínicas de individuos de una región determinada puede ayudar a saber cuánto está realmente expuesta esta poblacíon, lo que permite diferentes medidas para prevenir posibles enfermedades. La evaluación de la exposición a las micotoxinas es de fundamental importancia para la salud pública, ya que puede ayudar a prevenir o reducir las enfermedades causadas por estas toxinas. Esta revisión puede contribuir a instigar nuevas investigaciones sobre la posible relación entre la exposición a la ingestión de micotoxinas y las enfermedades derivadas de su interacción con el cuerpo.Fungos toxigênicos podem produzir micotoxinas em alimentos quando em condições favoráveis de temperatura e umidade. A ingestão diária destas micotoxinas nos alimentos pode trazer prejuízos a saúde humana e animal. O objetivo deste estudo foi verificar a exposição do organismo humano as micotoxinas e a sua ocorrência em amostras clínicas. Nesta revisão bibliográfica, os artigos foram selecionados por meio de banco de dados usando palavras combinadas para a busca do tema principal, sendo recrutados 60 trabalhos para a revisão geral e selecionados 20 desses para os dados de exposição às micotoxinas e achados em amostras clínicas. As micotoxinas são encontradas em diversos alimentos, desde cereais, leguminosas, frutas e vegetais. São moléculas altamente resistentes que permanecem mesmo após processamento na indústria, inclusive nos seus subprodutos. A intoxicação crônica pode ocorrer nos indivíduos, trazendo prejuízos a saúde. O achado de micotoxinas nas amostras clínicas de indivíduos de uma determinada região pode auxiliar no conhecimento de quanto esta população está realmente exposta, possibilitando assim, diferentes providências com o intuito de evitar possíveis doenças. A avaliação da exposição às micotoxinas é de fundamental importância para a saúde pública, uma vez que pode auxiliar na prevenção ou redução de doenças ocasionadas por estas toxinas.
