Microbiological and formaldehyde analysis in beef jerky marketed in public markets in Recife/PE

Resumo: The consumption of beef jerky is common in northeastern Brazil and its main form of commercialization and acquisition takes place in public markets. The objective of this work was to analyze the presence of formaldehyde and pathogenic microorganisms in jerked beef sold in public markets in the metropolitan region of Recife, Northeast Brazil. Twenty samples of beef jerky of different cuts were acquired from 10 stalls located in 3 public markets. The samples were sent to the laboratory to perform the formaldehyde test and microbiological analysis. It was found that 40% of the samples had formaldehyde and 100% of the samples were outside the standard allowed by IN nº 60 (Brasil, 2019), of the National Health Surveillance Agency. There is a need for the presence of public policies and inspection actions, aiming at improving the conditions of exposure and storage in the boxes to guarantee the food safety of the food sold.

El objetivo de este trabajo fue analizar la presencia de formaldehído y microorganismos patógenos en carne seca vendida en mercados públicos de la región metropolitana de Recife, Nordeste de Brasil. Se adquirieron 20 muestras de cecina de diferentes cortes en 10 puestos ubicados en 3 mercados públicos. Las muestras fueron enviadas al laboratorio para realizar la prueba de formaldehído y análisis microbiológico. Se constató que el 40% de las muestras tenían formaldehído y el 100% de las muestras estaban fuera del estándar permitido por la IN nº 60 (Brasil, 2019), de la Agencia Nacional de Vigilancia Sanitaria. Es necesaria la presencia de políticas públicas y acciones de fiscalización, visando mejorar las condiciones de exposición y almacenamiento en las cajas para garantizar la inocuidad alimentaria de los alimentos vendidos.O consumo de carne de charque é comum no nordeste do Brasil e sua principal forma de comercialização e aquisição se dá nos mercados públicos. O trabalho teve como objetivo analisar a presença de formaldeído e microrganismos patogênicos em charques comercializadas em mercados públicos na região metropolitana do Recife, Nordeste do Brasil. Foram adquiridas 20 amostras de carne de charque de diferentes cortes, provenientes de 10 boxes, situados em 3 mercados públicos. As amostras foram destinadas para ensaios laboratoriais para realização dos testes de formaldeído e análise microbiológica. Constatou-se que 40% das amostras estavam fraudadas com a presença de formaldeído e 100% das amostras encontraram-se fora do padrão sanitário permitido pela IN nº 60 (Brasil, 2019), da Agência Nacional de Vigilância Sanitária.
