Resumo: The palm had its origin in North and South America and has great potential for semi-arid regions, widely cultivated in Northeast Brazil, for tolerating long periods of drought. Because it is a cactacea its physiology provides greater efficiency in the use of water. The stem is succulent with an estimated relevant nutritional value to be used in the human diet. The objective was to discuss the most consumed palm genera, their bioactive compounds and information on their metabolism. A bibliographic survey was carried out on research platforms where 57 articles were selected to be used as a database. The content of bioactive compounds, the aroma, the color, the texture and the taste can be changed according to the enzymatic activity, mainly the phenylalanine ammonia lyase.

Debido a que es una cactácea, su fisiología proporciona una mayor eficiencia en el uso del agua. El tallo es suculento con un valor nutricional relevante estimado para ser utilizado en la dieta humana. El objetivo era discutir los géneros de palma más consumidos, sus compuestos bioactivos e información sobre su metabolismo. Se realizó una encuesta bibliográfica sobre plataformas de investigación donde se seleccionaron 57 artículos para ser utilizados como base de datos. El contenido de compuestos bioactivos, el aroma, el color, la textura y el sabor pueden modificarse de acuerdo con la actividad enzimática, principalmente la fenilalanina amoniaco liasa.A palma teve sua origem na América do Norte e do Sul e possui grande potencial para as regiões semiáridas, amplamente cultivada no Nordeste brasileiro, por tolerar longos períodos de estiagem. Por ser uma cactacea sua fisiologia proporciona maior eficiência no uso da água. O caule é suculento com estimado valor nutricional relevante para ser utilizado na na dieta humana. O objetivo foi discutir os gêneros de palma mais consumidos, seus compostos bioativos e informações sobre seu metabolismo. Foi realizado levantamento bibliográfico em plataformas de pesquisa onde foram selecionados 57 artigos para ser utulizado como banco de dados. O conteúdo de compostos bioativos, o aroma, a coloração, a textura e o sabor podem ser alterados de acordo com a atividade enzimática, principalmente a fenilalanina amônia-liase.
