Resumo: | The objective of this study was to evaluate the presence of microorganisms harmful to human health, contaminants of Minas Frescal cheeses, sold in commercial establishments in the municipality of Rolim de Moura - RO. For this, a descriptive research was done, which through description, analysis and quantitative verification, there was knowledge of the number of microorganisms located in the cheese samples. Thirty samples of Minas Frescal cheese marketed in the municipality of Rolim de Moura were evaluated, resulting in three positive samples for coliforms at 45 ° C, 13 positive samples for Escherichia coli, and all 30 positive samples for Staphylococcus sp., Through this analysis microbiological analysis it was found that the quality of Minas Frescal cheese consumed by the Rolimourense population is not within the ideal standards, related to contamination, which can cause public health problems. |

Para esto, se realizó una investigación descriptiva, que a través de la descripción, el análisis y la verificación cuantitativa, se conocía la cantidad de microorganismos ubicados en las muestras de queso. Se evaluaron treinta muestras de queso Minas Frescal comercializadas en el municipio de Rolim de Moura, lo que resultó en tres muestras positivas para coliformes a 45 ° C, 13 muestras positivas para Escherichia coli y las 30 muestras positivas para Staphylococcus sp., A través de este análisis En el análisis microbiológico se encontró que la calidad del queso Minas Frescal consumido por la población Rolimourense no está dentro de los estándares ideales, relacionados con la contaminación, que puede causar problemas de salud pública.O objetivo nesse estudo foi avaliar a presença de microrganismos prejudiciais à saúde humana, contaminantes de queijos Minas Frescal, vendidos em estabelecimentos comerciais no município de Rolim de Moura - RO. Para isso foi feito uma pesquisa descritiva, que por meio de descrição, análise e verificação quantitativa, houve o conhecimento do número de microrganismos localizados nas amostras de queijos.
