Resumo: | The red-fleshed pitaya, also called “red pitaya” (Hylocereus polyrhizus), stands out among many species due to the abundance of components found in its skin and pulp. The objective of this work is to carry out physical, bromatological, phytochemical and toxicological analyzes in search of obtaining data and scientific proof of the bioactive compounds existing in the fruit of the species Hylocereus polyrhizus. The studies carried out are of an experimental and mixed nature, quantitative and qualitative, carried out on samples obtained in the city of Belém, in the State of Pará. Pitaya is a citrus fruit that contains bioactive and essential compounds that could be confirmed in analyzes such as alkaloids, flavonoids , saponins and anthraquinones, in addition to considerable amounts of ascorbic acid (vitamin C). As for the soluble solids content, the average observed was 3.43 (21°C) Brix and pH of 4.21 with the positive presence of reducing sugars. The physical character of the fruit was promising when compared to other literature, with average diameters reasonably superior to species from other regions at 83.47mm, something that benefits trade and consumption. However, excessive intake of a food by the population can lead to toxicity in the body, and it is feasible for toxicological research such as the determination of methemoglobin to demonstrate the reliability of exotic species such as pitaya, as they contain safe concentrations of this molecule, with a maximum average of 1.85% against 2% of the acceptable parameter. In view of this, it is important to seek and prove new sources of beneficial chemical compounds to be used, both for possible pharmaceutical purposes and nutritional use, through fresh consumption of the fruit. |

El objetivo de este trabajo es realizar análisis físicos, bromatológicos, fitoquímicos y toxicológicos en busca de la obtención de datos y evidencia científica de los compuestos bioactivos existentes en el fruto de la especie Hylocereus polyrhizus. Los estudios realizados son de carácter experimental y mixto, cuantitativos y cualitativos, realizados en muestras obtenidas en la ciudad de Belém, en el Estado de Pará. La pitaya es un cítrico que contiene compuestos bioactivos y esenciales que podrían ser confirmados en análisis. como alcaloides, flavonoides, saponinas y antraquinonas, además de cantidades considerables de ácido ascórbico (vitamina C). En cuanto al contenido de sólidos solubles, el promedio observado fue de 3,43 (21°C) Brix y pH de 4,21 con presencia positiva de azúcares reductores. El carácter físico del fruto fue prometedor en comparación con otra literatura, con diámetros promedio razonablemente superiores a las especies de otras regiones con 83,47 mm, algo que beneficia el comercio y el consumo. Sin embargo, la ingesta excesiva de un alimento por parte de la población puede generar toxicidad en el organismo, y es factible que investigaciones toxicológicas como la determinación de metahemoglobina demuestren la confiabilidad de especies exóticas como la pitaya, ya que contienen concentraciones seguras de esta molécula. , con un promedio máximo de 1,85% contra 2% del parámetro aceptable. O objetivo deste trabalho é executar análises físicas, bromatológicas, fitoquímicas e toxicológicas em busca de obter dados e comprovações científicas dos compostos bioativos existentes no fruto da espécie Hylocereus polyrhizus. Os estudos realizados são de natureza experimental e mista, quantitativo e qualitativo, exercidos sobre amostras obtidas na Cidade de Belém, no Estado do Pará. A pitaya é uma fruta cítrica que contém compostos bioativos e essenciais que puderam ser confirmados nas análises como alcalóides, flavonóides, saponinas e antraquinonas, além de quantidades consideráveis de ácido ascórbico (vitamina C). Quanto ao teor de sólidos solúveis, a média observada foi de 3.43 (21°C) Brix e pH de 4.21 com a presença positiva de açúcares redutores. O carácter físico do fruto se mostrou promissor quando comparado a outras literaturas, com médias de diâmetro razoavelmente superiores a espécies de outras regiões com 83,47mm, algo que beneficia o comércio e consumo.
