Quality of fresh milk before normative instruction IN 76 of the Ministry of Agriculture, Livestock and Supply of Brazil

Resumo: Due to the quality, of the milk, being defined by its physical-chemical and microbiological parameters, normative instruction n ° 76 was established that recommends the mandatory requirements to the producer. The objective of this work was to evaluate the refrigerated fresh milk from four rural properties in the municipality of Rio Verde - GO, regarding the presence of psychrotrophic and proteolytic psychrotrophic microorganisms together with the CBT, CCS and proximal composition of the milk comparing the results with the required by IN 76. The samples of chilled raw milk were collected and later, the milk samples for CBT and CCS analysis, were sent for diagnosis at the Milk Quality Laboratory of the School of Veterinary Medicine and Zootechnics of the Research Center in Food at the Federal University of Goiás (LQL). Milkoscan 4000 equipment (Foss Electric A / S. Hillerod, Denmark) was used to determine the levels of fat, protein, lactose, total dry extract (EST), (ESD), urea and casein. Standard counts were performed on viable proteolytic psychrotrophic and psychrotrophic microorganism plates and the number of CFU / mL of the sample was calculated by multiplying the number of colonies on each plate by the inverse of the dilution. Results were obtained from the values of CBT, CCS, proximal composition, urea, casein, psychrotrophic and proteolytic psychrotrophic microorganisms that are mostly satisfactory and within the limits of the legislation, demonstrating the concern with good hygiene, handling and health practices of the animals that the owners of rural properties have.

El objetivo de este trabajo fue evaluar la leche fresca refrigerada de cuatro propiedades rurales en el municipio de Río Verde - GO, con respecto a la presencia de microorganismos psicrotróficos psicrotróficos y proteolíticos junto con la TCC, CCS y la composición proximal de la leche comparando los resultados con lo requerido por IN 76. Las muestras de leche cruda enfriada fueron recolectadas y luego, las muestras de leche para análisis de TCC y CCS, fueron enviadas para diagnóstico en el Laboratorio de Calidad de Leche de la Facultad de Medicina Veterinaria y Zootecnia del Centro de Investigación en Alimentación en la Universidad Federal de Goiás (LQL). Se utilizó el equipo Milkoscan 4000 (Foss Electric A / S. Hillerod, Dinamarca) para determinar los niveles de grasa, proteína, lactosa, extracto seco total (EST), (ESD), urea y caseína. Se realizaron recuentos estándar en placas de microorganismos psicrotróficos y psicrotróficos proteolíticos viables y se calculó el número de UFC / ml de la muestra multiplicando el número de colonias en cada placa por el inverso de la dilución. Los resultados se obtuvieron de los valores de TCC, CCS, composición proximal, urea, caseína, microorganismos psicrotróficos psicrotróficos y proteolíticos que son en su mayoría satisfactorios y dentro de los límites de la legislación, lo que demuestra la preocupación por las buenas prácticas de higiene, manipulación y salud de los animales que los propietarios de propiedades rurales tienen.Devido a qualidade, do leite, ser definida por seus parâmetros físico-químicos e microbiológicos, estabeleceu-se instrução normativa n° 76 que recomenda as obrigatoriedades ao produtor. Objetivou-se com esse trabalho a avaliação do leite in natura refrigerado de quatro propriedades rurais do Município de Rio Verde – GO quanto à presença de microrganismos psicrotróficos e psicrotróficos proteolíticos juntamente com as análises de CBT, CCS e composição proximal do leite comparando os resultados com o exigido pela IN 76. As amostras de leite cru refrigerado foram coletadas e posterior, as amostras de leite para análises de CBT e CCS, foram encaminhadas para o diagnóstico no Laboratório de Qualidade do Leite da Escola de Medicina Veterinária e Zootecnia do Centro de Pesquisa em Alimentos da Universidade Federal de Goiás (LQL). Utilizou-se o equipamento Milkoscan 4000 (Foss Electric A/S. Hillerod, Denmark) para determinar os teores de gordura, proteína, lactose, extrato seco total (EST), (ESD), ureia e caseína. Realizou-se a contagem padrão em placas de microrganismos psicrotróficos e psicrotróficos proteolíticos viáveis e calculou-se o número de UFC/mL da amostra multiplicando-se o número de colônias, em cada placa, pelo inverso da diluição.
