Study of physical and chemical properties during storage of honey produced in the region of Blumenau, Brasil

Resumo: This work had as objective to verify the quality of honey produced in the region of Blumenau/SC - Brazil and possible changes during its storage. For this, analyzes were carried out according to the legislation regarding moisture content, ash, acidity, reducing sugars, apparent sucrose, water insoluble solids, hydroxymethylfurfural, diastase activity, color and lund, fiehe and lugol reaction. The six samples were analyzed shortly after honey harvest and after 10 months of storage. From the obtained results it was verified that 33.33% of the samples presented disagreement with the standards established in the legislation. The parameters that presented the largest number of samples with significant variation along the storage were moisture and diastase activity, 100% and 66,67% respectively, the others had from 16.67% to 50% of the samples with significant variation with the exception of the apparent sucrose, which was the only one that did not have any expressive variation. These analyzes provided greater knowledge of honey produced in the region of Blumenau, thus increasing its added value, in addition to stimulating honey production and guaranteeing the consumer the purchase of a safe and quality product.

Para eso, se realizaron análisis de acuerdo con la legislación en relación con el contenido de humedad, cenizas, acidez, azúcares reductores, sacarosa aparente, sólidos insolubles en agua, hidroximetilfurfural, actividad diastásica, color y reacción de lund, fiehe y lugol. Las seis muestras se analizaron poco después de la cosecha de miel y después de 10 meses de almacenamiento. A partir de los resultados obtenidos se verificó que el 33.33% de las muestras mostraron desacuerdo con los estándares establecidos en la legislación. Los parámetros que mostraron el mayor número de muestras con variación significativa durante el almacenamiento fueron la humedad y la actividad diastásica, 100% y 66,67% respectivamente, los otros tenían 16,67% a 50% de las muestras con variación significativa con la excepción de la sacarosa aparente, que fue la única que no mostró variación expresiva. Estos análisis proporcionaron un mayor conocimiento de la miel producida en la región de Blumenau, aumentando así su valor agregado, además de estimular la producción de miel y garantizar al consumidor la compra de un producto seguro y de calidad.Este trabalho teve como objetivo verificar a qualidade do mel produzido na região de Blumenau/SC – Brasil e possíveis alterações durante seu armazenamento. Para isto foram realizadas análises de acordo com a legislação em relação ao teor de umidade, cinzas, acidez, açúcares redutores, sacarose aparente, sólidos insolúveis em água, hidroximetilfurfural, atividade diastásica, cor e reação de lund, fiehe e lugol. Seis amostras foram analisadas logo após a colheita do mel e após 10 meses de armazenamento. A partir dos resultados obtidos verificou-se que 33,33% das amostras apresentaram desacordo com os padrões estabelecidos na legislação. Os parâmetros que apresentaram o maior número de amostras com variação significativa ao longo do armazenamento foram umidade e atividade diastásica, 100% e 66,67% respectivamente, os demais tiveram de 16,67% a 50% das amostras com variação significativa com exceção da sacarose aparente, a qual foi a única que não teve nenhuma variação expressiva.
