Physicochemical aspects and nutritional quality of coco catolé (Syagrus cearensis)

Resumo: Among the native palms of the Brazilian Northeast is the Catolé (Syagrus cearensis), whose information about its fruit is incipient. In this way, the objective was to evaluate the physical-chemical characteristics and nutritional quality of the coconut fruit, guaranteeing and expanding its use in the diet of the Brazilian semi-arid region. The whole fruit, the endocarp and the endosperm had an average weight of 39.33; 17.40 and 1.74 g, respectively. In the pulp, the levels of moisture (68.74%), ashes (1.91%), proteins (3.53%), lipids (0.46%) and carbohydrates (25.36%), showed the susceptibility of this fruit to the fungal action, being important to observe its storage conditions. The almond, with low moisture contents (6.51%), showed the protein content (9.95%) and lipid (38.22%), confirming the excellent yield of the genus Syagrus in the production of vegetable oil. For the pulp pigments values of 6.38 and 1.86 mg/100g of total flavonoids and carotenoids were found, respectively. Almond presented a representative profile of minerals: magnesium (143.02 mg/100 g), potassium (515.35 mg/100 g), manganese (2.44 mg/100 g) and copper (1.76 mg/100 g). Most of the daily intake requirements recommended. The study of fruit composition contributes to the knowledge of the nutritional and functional properties of Catolé and to fill a gap still existing in the literature on the potential of using Syagrus cearensis.

En la pulpa, el contenido de humedad (68.74%), cenizas (1.91%), proteínas (3.53%), lípidos (0.46%) y carbohidratos (25.36%) combinados con un pH de 5, 1, mostró la susceptibilidad de esta fruta a la acción fúngica, siendo importante observar sus condiciones de almacenamiento. La almendra, con bajo contenido de humedad (6.51%), destacó el contenido de proteína (9.95%) y el contenido de lípidos (38.22%), confirmando el excelente desempeño del género Syagrus en la producción de aceite vegetal. Para los pigmentos de pulpa, se encontraron valores de 6,38 y 1,86 mg / 100 g de flavonoides y carotenoides totales, respectivamente. La almendra presentó un perfil mineral representativo: magnesio (143.02 mg / 100g), potasio (515.35 mg / 100g), manganeso (2.44 mg / 100g) y cobre (1.76 mg / 100g), teniendo en cuenta la mayoría de ellos los requisitos de ingesta diaria recomendada. El estudio de la composición de la fruta contribuye al conocimiento de las propiedades nutricionales y funcionales de Catolé y a llenar un vacío que todavía existe en la literatura sobre el uso potencial de Syagrus cearensis.Dentre as palmeiras nativas do Nordeste brasileiro tem-se o Catolé (Syagrus cearensis), cujas informações sobre seu fruto são incipientes. Na polpa os teores de umidade (68,74%), cinzas (1,91%), proteínas (3,53%), lipídios (0,46%) e carboidratos (25,36%) aliado ao pH de 5,1, mostrou a susceptibilidade deste fruto à ação fúngica, sendo importante observar suas condições de armazenamento. A amêndoa, com baixos teores de umidade (6,51%), destacou-se o conteúdo proteico (9,95%) e lipídico (38,22%), confirmando o excelente rendimento do gênero Syagrus na produção de óleo vegetal. Para os pigmentos da polpa foram encontrados valores de 6,38 e 1,86 mg/100g de flavonoides e carotenoides totais, respectivamente. A amêndoa apresentou representativo perfil de minerais: magnésio (143,02 mg/100g), potássio (515,35 mg/100g), manganês (2,44 mg/100g) e cobre (1,76 mg/100g), atendendo na sua maioria as exigências de ingestão diária recomendada.
