Evaluation of the potential of generating energy from organic waste from a popular restaurant

Resumo: The urgency of innovation in the energy field, combined with environmental concerns and the high generation of waste on the world stage, increasingly encourages the use of anaerobic digestion techniques as a thriving technology for the treatment of such environmental liabilities and the production of biogas. Thus, the use of a biodigester for biogas production is one of the possible ways to take advantage of the renewable energy potential available in the environment. Thus, this research aims to evaluate the potential of biogas production in the operation of a batch bench biodigester, from waste produced in a popular restaurant located in the neighborhood of Rosa Elze, in the city of São Cristóvão, using it as an inoculum goat manure, in adverse concentration (0, 1, 2 and 3%). The biodigesters used in the study were developed from the reuse of polyethylene terephthalate (PET) bottles and operated for 21 days at a temperature of 25 °C. With this, it was possible to verify the evolution of the daily generation of biogas through the anaerobic decomposition of organic matter and also to monitor the temperature and pH of the samples. According to the results found in this research, the best condition for the production of biogas was with a concentration of 3% of inoculum, with a pH of 7.12, that is, with pH adjustment, obtaining a production of 18 mL of biogas. In the energy generation potential, the present work obtained a generation of 321 kWh/month, indicating a gain of R$157.97/month            with the biogas produced by the food residues of the popular restaurant. They indicate anaerobic digestion as a  sustainable process, being efficient and with low cost.

Por lo tanto, el uso  de un biodigestor para producir biogás es una de las formas posibles de aprovechar el potencial de energía renovable disponible en el medio ambiente. Con esto, la presente investigación tiene como objetivo evaluar el potencial de producción de biogás en la operación de un biodigestor discontinuo de mesa, a partir de los residuos producidos en un restaurante popular ubicado en el barrio Rosa Elze, en la ciudad de São Cristóvão, utilizando como inóculo cabra estiércol, en concentración adversa (0, 1, 2 y 3%). Los biodigestores utilizados en el estudio se desarrollaron a partir de la reutilización de botellas de tereftalato de polietileno (PET) y operaron durante 21 días a una temperatura de 25 °C. Con ello, fue posible verificar la evolución de la generación diaria de biogás a través de la descomposición anaeróbica de la materia orgánica y, además, monitorear la temperatura y el pH de las muestras. De acuerdo a los resultados encontrados en esta investigación, la mejor condición para la producción de biogás se dio con la concentración de 3% de inóculo, con un pH de 7.12, es decir con ajuste de pH, obteniendo una producción de 18 mL de biogás. En el potencial de generación de energía, el presente trabajo obtuvo una generación de 321 kWh/mes, indicando una ganancia de R$ 157,97/mes con el biogás producido por los residuos de alimentos del restaurante popular. Señalan la digestión anaeróbica como un proceso sustentable, siendo eficiente y de bajo costo.A urgência de inovação no âmbito energético, aliada à preocupação ambiental e à alta geração de resíduos no cenário mundial, impulsiona cada vez mais o uso de técnicas de digestão anaeróbia como tecnologia próspera para tratamento de tais passivos ambientais e a produção do biogás. Desta forma, a utilização de biodigestor para produção de biogás é uma das possíveis maneiras de aproveitar o potencial energético renovável disponível no meio ambiente. Com isso, a presente pesquisa tem o objetivo de avaliar o potencial de produção de biogás na operação de biodigestor de bancada em batelada, a partir dos resíduos produzido em restaurante popular localizado no bairro de Rosa Elze, na cidade de São Cristóvão, utilizando como inóculo esterco de caprinos, em concentração adversa (0, 1, 2 e 3%). Os biodigestores utilizados no estudo foram desenvolvidos a partir a reutilização de garrafas de polietileno tereftalato (PET) e operados por 21 dias à temperatura de 25 °C. Com isso, foi possível verificar a evolução da geração diária de biogás por meio da decomposição anaeróbia de matéria orgânica e, também, acompanhar a temperatura e o pH das amostras. De acordo com os resultados encontrados nesta pesquisa, a melhor condição para a produção do biogás se deu com o a concentração de 3% de inóculo, com pH de 7,12, ou seja, com ajuste de pH, obtendo-se uma produção de 18 mL de biogás. No potencial de geração de energia, o presente trabalho obteve uma geração de 321 kWh/ mês, indicando um  ganho de R$157,97/ mês com o biogás produzido pelos resíduos alimentares do restaurante popular.
