Enteroparasites in food handlers: an integrative review

Resumo: The present study aimed to identify enteroparasites in food handlers described in the literature. This is an integrative literature review, which obtained a total of eleven articles, in which a thorough analysis of the studies available in full in the databases: International Literature on Health and Biomedical Sciences (Pubmed), Academic OneFile and Scientific Electronic Library Online (SciELO). We identified 100 articles, of which after an analysis of the studies, 11 articles addressed the proposed theme and met the inclusion criteria. From the comprehension and analysis of the data obtained by reading the selected studies, it was found that 100% of the works referred to field research. The food handler should maintain good hygiene habits to ensure the production of quality food, and have knowledge to prevent parasite involvement.

Esta es una revisión bibliográfica integradora, que obtuvo un total de once artículos, en los que se realizó un análisis exhaustivo de los estudios disponibles en su totalidad en las bases de datos: Literatura Internacional sobre Salud y Ciencias Biomédicas (Pubmed), Academic OneFile y Scientific Electronic Library Online (SciELO). Identificamos 100 artículos, de los cuales después de un análisis de los estudios, 11 artículos abordaron el tema propuesto y cumplieron con los criterios de inclusión. A partir de la comprensión y el análisis de los datos obtenidos al leer los estudios seleccionados, se encontró que el 100% de los trabajos se referían a investigaciones de campo. El manipulador de alimentos debe mantener buenos hábitos de higiene para garantizar la producción de alimentos de calidad y tener conocimientos para evitar la participación de parásitos.O presente estudo teve por objetivo identificar os enteroparasitas em manipuladores de alimentos descritos na literatura. Trata-se de uma revisão de literatura do tipo integrativa, onde se obteve um total de onze artigos, no qual foi realizada uma análise criteriosa dos estudos disponíveis na íntegra nas bases de dados: Literatura Internacional em Ciências da Saúde e Biomédica (Pubmed), Academic OneFile e Scientific Electronic Library Online (SciELO). Foram identificados 100 artigos, dos quais após uma análise dos estudos, 11 artigos abordavam a temática proposta e atenderam aos critérios de inclusão. A partir da compreensão e análise dos dados obtidos por meio da leitura dos estudos selecionados, verificou-se que 100% dos trabalhos referiam-se a pesquisas de campo.
