The importance of reusing waste from the food industry: the case of fruit processing

Summary: The industrial process is the main cause of generation of by-products, highlighting the food industry that uses tons of fruits that are discarded, these are great sources of active compounds with recycling potential. The objective of this work was to search for studies with the residues of the food industry and to identify alternatives to reduce the loss. This is a review which was developed from the analysis of studies found in 2 databases: PubMed and Google Scholar. Works were selected that involved plant species associated with food waste and possible alternatives to minimize the environmental impact. The species Citrus sinensis, Persea americana, Musa spp., Punica granatum and Hylocereus undatus presented alternatives to combat waste and present biological activity. The use of unconventional parts of fruit is a sustainability practice, leading to less disposal of organic waste to the environment, consequently reducing the negative impact.

El objetivo de este trabajo fue buscar estudios con los residuos de la industria alimentaria e identificar alternativas para reducir la pérdida. Esta es una revisión que se desarrolló a partir del análisis de estudios encontrados en 2 bases de datos: PubMed y Google Scholar. Se seleccionaron trabajos que involucran especies vegetales asociadas al desperdicio de alimentos y posibles alternativas para minimizar el impacto ambiental. Las especies Citrus sinensis, Persea americana, Musa spp., Punica granatum e Hylocereus undatus presentaron alternativas para combatir los residuos y presentar actividad biológica. El uso de partes no convencionales de la fruta es una práctica de sostenibilidad, lo que lleva a una menor eliminación de residuos orgánicos en el medio ambiente, con la consiguiente reducción del impacto negativo.O processo industrial é a principal causa de geração de subprodutos, destacando a indústria alimentícia que emprega toneladas de frutas que são descartadas, estas são grandes fontes de compostos ativos com potencial de reciclagem. O objetivo deste trabalho foi a busca de estudos com os resíduos da indústria de alimentos e identificar alternativas para diminuir a perda. Trata-se de uma revisão no qual foi desenvolvida a partir da análise de estudos encontrados em 2 bases de dados:  PubMed e Google Scholar.  Foram selecionados trabalhos que envolviam espécies vegetais associadas ao desperdício alimentar e possíveis alternativas para minimizar o impacto ambiental. As espécies Citrus sinensis, Persea americana, Musa spp, Punica granatum e Hylocereus undatus apresentaram alternativas para combater o desperdício e apresentam atividade biológica.
