Resumo: The species Xylopia sericea (pindaiba-branca), belonging to the Annonaceae family and native to the Bacia do Rio Doce, is widely distributed in the Mariana region, especially in the Furquim community. The seeds of the white pindaíba have a spicy and aromatic flavor and are used in cooking. Thus, the project aimed to analyse the chemical profile of the Xylopia sericea species using high performance liquid chromatography coupled to a diode array detector and mass spectrometry. The leaves and seeds of X. sericea were collected in the Community of Furquim, Mariana, MG. The leaves and seeds were dried and ground in an analytical mill, pulverized and submitted to extraction with 70:30 v/v ethanol/water. The extracts were prepared using an ultrasonic bath for 30 minutes. Supernatants were analysed using the UHPLC-DADCAD and UHPLC-DAD-MS systems. As an annotation strategy of the metabolites present in the analysed extracts, a bibliographic survey of the compounds already isolated in the genus Xylopia sp. Thus, a spreadsheet containing the chemical structure, molecular formula, and IUPAC nomenclature of 209 metabolites was added to the UNIFI platform to facilitate the identification process. The main classes of metabolites identified were derived from the flavonoids quercetin and kaempferol with λmax of 257 and 356 nm. Therefore, the results obtained in this work seek to add knowledge to the by-products of the X. sericea production chain, thus enabling the community to gain economic advantage in the sustainable exploitation of the productive arrangements of biodiversity in the future.
