Resumo: Brazil is rich in native and/or exotic tropical fruit species with high agro-industrial potential. A large amount of fruit residues is generated daily by industry and, in most cases, such residues have their use limited to animal feed industry or end up being disposed of in the environment, consequently causing serious environmental damages. However, these residues have high potential because, besides containing carbohydrates, vitamins, and minerals, they are rich in indigestible fraction and other compounds of functional properties. This study aimed at analyzing the oils extracted from agro-industrial waste in order to identify bioactive compounds and antioxidant capacity of associated compounds. Pumpkim (Cucurbita moschata), citron (Citrus medica L.), guava (Psidium guajava L.), soursop (Anona muricata L.), kinkan (Fortunella margarita Swingle), orange (Citrus sinensis L. osbeck), apple (Mallus domestica Borkh), papaya (Carica papaya L.), mango (Mangifera indica L.), mangaba (Hancornia speciosa var. pubescens), passion fruit (Passiflora adulis Sims), melon (Cucumis melo var. inodorus Naudin), strawberry (Fragaria x ananassa Duchesne), tomato (Solanum Lycopersicum), and grape (Vitis labrusca L.) seeds were separated, washed, dried in an oven, at 40°C, and crushed. The oil was obtained by the Bligh & Dyer method. Determinations of fatty acid composition, theoretical composition of triacylglycerols, tocopherols, phytosterols, and phenolic compounds, total carotenoids, unsaponifiable matter, and oxidative stability were performed in the seed oils, besides antioxidant activity essays, by the methods of DPPH•, ABTS•+, FRAP, and β-carotene/linoleic acid system. The results were submitted to analysis of variance and Tukey test for 5% probability, expressed as mean of three measurements ± standard deviation. Diariamente, um grande volume de resíduos de frutos é gerado pela agroindústria, e os mesmos, na maioria das vezes, têm uso limitado somente para a indústria de rações animais ou para o descarte no meio ambiente, causando sérios danos ambientais. Entretanto, estes resíduos apresentam elevado potencial, pois, além de possuírem carboidratos, vitaminas e sais minerais, são ricos em fração indigerível e outros compostos com propriedades funcionais. Este trabalho teve como objetivo estudar os óleos extraídos de sementes provenientes dos resíduos agroindustriais a fim de identificar compostos bioativos e capacidades antioxidantes de compostos associados. As sementes de abóbora (Cucurbita moschata), cidra (Citrus medica L.), goiaba (Psidium guajava L.), graviola (Anona muricata L.), kinkan (Fortunella margarita Swingle), laranja (Citrus sinensis L. osbeck), maçã (Mallus domestica Borkh), mamão (Carica papaya L.), manga (Mangifera indica L.), mangaba (Hancornia speciosa var. pubescens), maracujá (Passiflora adulis Sims), melão (Cucumis melo var. inodorus Naudin), morango (Fragaria x ananassa Duchesne), tomate (Solanum Lycopersicum) e uva (Vitis labrusca L.) foram separadas dos resíduos, lavadas, secas em estufa a 40°C por períodos que variaram de 1 a 7 dias, trituradas e os óleos obtidos pelo método de Bligh & Dyer. Nos óleos das sementes foram realizadas determinações do perfil de ácidos graxos, composição teórica de triacilgliceróis, composições de tocoferóis, de fitosteróis e de compostos fenólicos, carotenoides totais, matéria insaponificável, medida da estabilidade oxidativa, além dos ensaios de capacidade antioxidante pelos métodos de DPPH•, ABTS•+, FRAP e β-caroteno/ácido linoleico.
