Resumo: | The aim of this paper is to discuss the possibilities brought by new preservation technologies applied to our cultural heritage. In particular we discuss Brazilian cuisine, understood in this situation as the cuisine which identifies a location within a historical-cultural milieu. The research points to the construction of a virtual museum containing cuisine knowledge and flavors, mapping data and practices related to Brazilian Typical Gastronomy. The article points toward the possibility of preservation of this cultural heritage. |

O objetivo deste artigo é discutir as possibilidades trazidas pelas novas tecnologias de preservação do patrimônio cultural, em particular, da gastronomia típica brasileira, entendida neste contexto, como aquela que identifica uma localidade, dentro de um processo histórico-cultural. O estudo propõe o inicio da construção de um museu virtual de saberes sobre os sabores, mapeando os conhecimentos e os fazeres relativos à Gastronomia Típica Brasileira, ameaçada ante um processo de homogeneização dos sabores, conseqüência direta da globalização.
