Resumo: Sururu is a common bivalve mollusk in the mangroves of Maranhão. It has great potential for commercialization. Therefore, the objective of this work was to identify and quantify Staphylococcus genera and quantify aerobic mesophilic bacteria (AMB) in uncooked sururu fresh meat sold at São Luís - MA fairs. The 72 samples were taken during six months from four fairs called A, B, C and D. Results revealed the presence of coagulase-negative Staphylococcus (CNS) in counts very high. There was no significant difference between the CoNS populations at the fairs evaluated nor between the seasons of the year. In relation to AMB, the high counts demonstrated that all samples were outside the target established by the legislation. The averages of AMB populations did not vary significantly between fairs or between seasons. The check list showed that none of the fairs met the minimum structure and hygiene requirements for food marketing. The high populations of CNS and AMB in the analyzed samples suggest that flaws may have occurred during the obtaining of sururu and in the hygiene of the environment. Thus, greater attention is required during the processing and commercialization of this food so that there is no compromise in the product's useful life and especially in the health of the consuming population.
