Resumo: This paper aims to analyze the correlation between cuisine as a formative element of a nation's identity and globalization. In order to reach this, it was conducted an extensive bibliographic search, where we sought to understand cuisine throughout History and its role in the formation of national identities; we analyzed the main theories of globalization relevant to the study; and finally, the relation between cuisine and globalization became evident through concrete examples from Ancient History to modern times. As a result, this work understands that the globalization seen in the light of the exchange promoted by food, whether by necessity or curiosity, is not limited to theories centered on capitalism, profit and homogenization. It is evident that the international sphere is necessary throughout the history of food, and that it promotes the constant ongoing formation of national identities.

Para tanto, através de uma extensa pesquisa bibliográfica, buscou-se compreender a culinária ao longo da história e seu papel na formação das identidades nacionais; analisou-se as principais teorias da globalização pertinentes ao estudo; e por fim, evidenciou-se, através de exemplos concretos, da Antiguidade aos tempos modernos, a real relação entre globalização e culinária. De forma geral, este trabalho compreende que a globalização vista à luz do intercâmbio promovido pela alimentação, seja ele por necessidade ou curiosidade, não se limita às teorias centradas no capital, lucro e homogeneização.
