Critical analysis of knowledge about and practices about health and education professionals’ eating habits

Resumo: | The knowledge and practices of individuals (re)produce themselves daily based on the intertwining of personal experience with the human and social relations experienced in the various collective spaces. In this regard, schools and health facilities are privileged spaces of action and research. The purpose of this article is to discuss knowledge and practices related to eating habits, central to the crosscutting theme of health, through dialog with education and health professionals of the municipality of Rio de Janeiro, Brazil. To achieve this, discussions carried out in the socio-anthropological field of eating were considered. Qualitative research methods were used to enhance the intersubjectivities and meanings the subjects attribute to their own life experiences. Four focus groups were analyzed, which resulted in debates on the social processes related to food, to changes and continuities in food systems, and to the challenges of commensality in the contemporary context. Knowledge on these professionals’ perceptions is useful to develop health education practices that, by exercising transdisciplinary, consider food as a pedagogical element in the construction of knowledge by critical citizens and for a healthy life. |

En tal sentido, escuelas y unidades de salud se configuran como espacios privilegiados de actuación e investigación. El objetivo de este artículo es discutir los saberes y prácticas relacionados con la alimentación, cuestión central para el tema transversal salud, por medio del diálogo con profesionales de educación y de salud del municipio de Río de Janeiro, Brasil. Para ello, se consideraron discusiones desarrolladas en el ámbito de la socioantropología de la alimentación. Se utilizaron métodos de investigación cualitativa, buscando valorizar las intersubjetividades y los significados atribuidos por los individuos a sus propias experiencias de vida. Se analizaron cuatro grupos focales, que resultaron en debates sobre los procesos sociales relacionados con la alimentación, con los cambios y permanencias en los sistemas alimentarios y con los desafíos de la comensalidad en el contexto contemporáneo. El conocimiento de las percepciones de estos profesionales se vuelve útil para el desarrollo de prácticas de educación en salud que, ejercitando la transdisciplinariedad, consideren la alimentación como elemento pedagógico en la construcción de conocimientos por parte de ciudadanos críticos y para una vida saludable.Os saberes e práticas dos indivíduos se (re)produzem cotidianamente com base no entrelaçamento da bagagem pessoal com as relações humanas e sociais experimentadas nos diversos espaços coletivos. Nesse sentido, escolas e unidades de saúde se configuram como espaços privilegiados de atuação e investigação. O objetivo deste artigo é discutir os saberes e práticas relacionados à alimentação, questão central para o tema transversal saúde, por meio do diálogo com profissionais de educação e de saúde do município do Rio de Janeiro. Para isso, foram consideradas discussões desenvolvidas no âmbito da socioantropologia da alimentação. Foram utilizados métodos da pesquisa qualitativa, buscando valorizar as intersubjetividades e os significados atribuídos pelos sujeitos às suas próprias experiências de vida. Foram analisados quatro grupos focais, que resultaram em debates sobre os processos sociais relacionados à alimentação, às mudanças e permanências nos sistemas alimentares e aos desafios da comensalidade no contexto contemporâneo.
