Resumo: | The aim of this work was to evaluate the composition of UHT milk from two dairy plants of north and northwest region of Paraná State. Fat, protein, lactose, total solids, fatty acids profile and Somatic Cell Counting (SCC) were measured in samples of UHT milk, of two region brands. The samples were purchased in six consecutive weeks. Results showed that the nutritional values of UHT full fat milk were in accordance with standard full fat milk requirements. The was no significant difference (p<0.05) between the two dairy plants for fat, protein, totals solids, fatty acids profile and SCC. However, the two dairy plants showed significant difference (p<0.05) in lactose values. The results also showed low values of SCC on the UHT milks. |

O teor de gordura, proteína, lactose, sólidos totais, o perfil dos ácidos graxos e a contagem de células somáticas (CCS) foram medidos em amostras de leite UHT integral de duas marcas da região, por seis semanas consecutivas. Os resultados mostraram que a composição do leite UHT integral atende aos padrões do tipo, não observando diferença significativa (p>0,05) entre os dois laticínios quanto aos teores de gordura, proteína, sólidos totais, perfil de ácidos graxos e CCS. Houve diferença significativa (p<0,05), porém, quanto aos teores de lactose entre os dois laticínios.
