Entre o individual e o coletivo: as estratégias de resistência adotadas por trabalhadoras de cozinha em restaurantes no Brasil e na Espanha

The aim of this doctoral research was to understand the resistance strategies of female kitchen workers in commercial restaurants to gender inequality and discrimination at work in Brazil (Rio de Janeiro) and Spain (Barcelona). To this end, a qualitative research approach was carried out, building a scientific mosaic made up of bibliographical and empirical research in which narratives were collected using the biographical method through 24 individual in-depth interviews with female restaurant workers from both countries. The analysis consisted of the initial identification of themes, which were coded in a second stage to group them into categories. The empirical research revealed categories of resistance strategies in the sector, as well as discussions on the themes of relationships with other women, motherhood, race and reconciling personal life, especially food production in the home, with the paid careers of the research subjects. In the thematic group of strategies, the codes identified were grouped into the following categories: insertion and permanence; effort and dedication; posture and direct action; autonomy, entrepreneurship, and self-employment; accumulation of experiences; collective dimension; and limits of resistance. The results show a variety of individual and collective strategies used by the research subjects to resist at work in the restaurant sector. The individual strategies were to fit in and meet the expected standards of success in the sector, adhering to a neoliberal rationality and manipulating their behaviors and ways of acting at work in order to challenge the stereotypes and gender roles expected of them. Collective strategies, on the other hand, involved building alliances at work and sharing hidden transcripts in an information network in the sector that seeks to alert colleagues to locations or bosses who exercise bad practices. When comparing the experiences described by workers in both countries, more similarities than differences were observed, although some of these stood out, such as the identification of racial issues in Brazil, the greater centrality of motherhood and entrepreneurship in Spain and an apparent stronger structure of hidden transcripts in Rio de Janeiro. Despite the challenges and inequalities faced by female restaurant kitchen workers, these women are political subjects/agents in their workspace and beyond, capable of articulating strategies, individual or collective, to break down, fragment or destabilize, to some extent, gender discrimination and inequalities in the market.
