Resumo: Celiac disease directly affects the eating habits and practices of individuals intolerant to gluten. As it is a disease whose treatment is aimed at restricting foods that contain gluten, the inclusion of new eating practices can mean a social and cultural shift, since the market is still unprepared to meet this demand. Thinking about improving the quality of life of individuals with this pathology this work aims to carry out technological prospecting to map the technological development of equipment that identifies the presence of gluten in food samples. As a prospecting tool, the Orbit platform was used, in which 596 families of patents were found on the subject, belonging to G01N classification. Thus, it is hoped that this prospecting can influence innovations on this theme in industry, society and the economy in general, given the deficit of works in Brazil.
