Resumo: Cocoa for sale is classified into bulk cocoa or fine cocoa, with the latter being used in the production of bean-to-bar chocolate, which promotes a more sustainable approach to chocolate production. The literature review was conducted by searching for articles in the SCIELO, SIMPEP and ENEGEP databases. Articles that addressed the terms "cocoa processing," "industrial chocolate," "bean to bar," and "chocolate marketing" were selected with the aim of analyzing the differences between industrial chocolate and bean to bar. A total of 22 articles were found, and the utilization for analysis was 36%. Although some difficulties were encountered in accessing additional relevant information, the study identified differences between the two types of chocolate, including nutritional information, resources available for production and marketing, and the growing concern for sustainability in the chocolate supply chain.

A revisão bibliográfica foi realizada por meio da busca de artigos nas bases de dados SCIELO, Anais do SIMPEP e do ENEGEP. Foram selecionados artigos que abordavam os termos "processamento do cacau", "chocolate industrial", "bean to bar" e "comercialização de chocolate", com o objetivo de analisar as diferenças encontradas entre o chocolate industrial e o bean to bar. Foram encontrados 22 artigos, e o aproveitamento para a análise foi de 36%.
