Resumo: The culinary language is so communicative that run through the cultural texts accrued the kitchen. Enabling of complexes mediations, the culinary occupies of cooking, as a technical act, in sharing and congregating social acts. The culinary resides equally in both spaces, manuscripts and virtual because it comes from a language that can be decoded in different cultural systems: isolated villages of natives, running through TV shows, passing over blogs, social media, magazines, tablets, and many media environment. There is a daily and domestic life, which shows itself and updates throughout modernity. The blogs of culinary recipes, known as virtual diaries, enable new forms of social interaction. From this point of finding, this work investigates the linguistic-discursive constitutive in practices of manuscripts writing which emigrates from the book's recipes; in this work called of culinary manuscripts; to blogs of culinary recipes which rises in this context of speech production. Thus, there are some guiding points that leads the main issue of this research: The texts which constitute the culinary recipes denotes the discursive gender whose they belong and organize themselves in a systematic relation and are also found, in this midwives, new paradigmatic symbols of social behavior of whom publishes the recipes, once the supports points to a new and covered world seen through the rules of behavior in work professional and social environment, what reveals a new course of these recipes not more restricted only in homeworld? This thesis is characterized as a Qualitative documentary, because intends to describe and register linguistic practices highlighting the changes, the unconscious mechanism of the identity of culinary recipes due to the blogs. The thesis for this research is held from the culinary blog's analysis that adapts themselves in a historical time of post-modernity; arising from the traditional culinary manuscripts, causing the self-configuration and updates in blogs, structuring and organizing spatiality, creating environment and scenarios through the cyberspace, as well as the culinary manuscripts, a symbolic fetish that forms as objects which is attributed the unique power in the search of transmission of culinary knowledge, representing then, a space for discursive practices proper to a subject on a certain historical condition. To understand this lathing of voices and interaction mediated by virtual supports, it is necessary take in consideration the theories which suits of basis to this research; the theory of circularity and movement of voices by Zumthor (1993, 1997, 2001); and the theory of discursive traditions in perspective of Kabatek (2006). Technical supports held by other theories, just as semiotic, multimodality and textual genders. All necessary to justify that the cultural and textual traditions can be aggregated in media recipes for the virtual interactions among people who “surf on the internet” and interact on blogs of culinary recipes. The research is unleveraged in “create facts”, but, understand and realize its cultural conditions. Some strategies of investigation and data collection, such as blog selection (which were previously chosen), work systematization: data collection, analysis of representation and fidelity of posts, gender mark of those who post, comment and publish, blog’s authorship and visitors, in addition to other analysis which were emerging throughout the research’s progress. Methodologically it is intended to verify how the culinary and gastronomy language qualifies the spaces where such texts of a culture born and transform themselves employing examples, looking forward to mapping an epistemological purpose of the birth of a language that operates its contents through the environment, regardless the chosen form. The feeding noticed as communication through the language as well as lyrics, voice, performance, interaction, publication, identity, subjective, and dialogue, the process of interaction and communication of the food and the mediatization of culinary recipes suggests a great discursive variety existed on media recipes. Demonstrating that the technology and its ramifications, which accompanies are changing the biding between the man and their food; in many circumstances, the food communicates more directly with the man than with its image.

Al proporcionar mediaciones complejas, la cocina se ocupa de cocinar como un acto técnico y de reunir y compartir actos sociales. La cocina también habita tanto el manuscrito como los espacios virtuales, ya que es un lenguaje que puede decodificarse en diferentes sistemas culturales: desde pueblos indios aislados hasta programas de televisión, pasando por blogs, redes sociales, revistas, tabletas y otros entornos de medios. Hay una vida, doméstica y cotidiana, privada que se muestra y actualiza con modernidad. Los blogs de recetas culinarias, o las llamadas revistas virtuales, permiten nuevas formas de interacción social. A partir de estos hallazgos, este artículo investiga la dimensión constitutiva lingüística-discursiva de las prácticas de escritura de recetas culinarias que migran de los libros de recetas, en este trabajo llamados manuscritos culinarios, a los blogs de recetas culinarias que surgen en este contexto de producción del discurso. Así, a algunos puntos de orientación que dirige el problema principal de la investigación: los textos que constituyen la receta culinaria del denotan el género discursivo al que pertenecen y se organizan en sus relaciones sistemáticas y también se encuentran en estos soportes mediáticos, nuevos símbolos paradigmáticos del comportamiento social de quienes publican la receta, ya que los soportes apuntan a un mundo nuevo y aún oculto, percibido a través de las normas de comportamiento en el entorno profesional de trabajo social, ¿Que revela un nuevo camino de estas recetas que ya no se limita mundo de origen? Esta tesis se caracteriza por ser documental a la de un orden cualitativo, ya que tiene la intención de describir y registrar prácticas lingüísticas destacando los cambios, los mecanismos inconscientes de la manifestación de identidad de las recetas culinarias de los blogs de recetas culinarias. La tesis para esta investigación se basa en el análisis de que las recetas culinarias de los blogs se adaptan a la misma historia de posmodernidad de los manuscritos culinarios tradicionales, haciendo que el manuscrito configure y actualice el blog, estructurando y organizando especialidades, creando entornos y escenarios a través del ciberespacio, constituyendo así los manuscritos culinarios, un fetiche simbólico que se forma como objetos a los que se les atribuye un poder único en la búsqueda de la transmisión del conocimiento culinario, lo que representa un espacio para prácticas discursivas propias de un sujeto bajo ciertas condiciones históricas. Para comprender esta intersección de voces y la interacción mediada por soportes virtuales, uno debe tener en cuenta las teorías que subyacen a esta investigación; la teoría de la circularidad y el movimiento de las voces de Zumthor (1993, 1997, 2001); y la teoría de las tradiciones discursivas desde la perspectiva de kabatek (2006). Estos apoyos teóricos, subsidiados por otras teorías: semiótica, multimodalidad y los géneros textuales. Todo esto es necesario para justificar que las tradiciones culturales y textuales se pueden agregar en las recetas de los medios, a veces a través de la interacción virtual entre las personas que "navegan" e interactúan en blogs de recetas culinarias. La investigación no se aprovecha para "pegar hechos" sino para comprender y comprender su propia condición cultural. Se utilizarán algunas estrategias de investigación y recopilación de datos, tales como: blogs de selección (ya que fueron elegidos previamente), sistematización del trabajo: recopilación de datos, análisis de la representación y fidelidad de publicaciones, marca de género de quién publica, comentarios y público, autoría de blogs y visitantes, y otras pautas analíticas que surgieron durante la investigación. Metodológicamente, pretendemos verificar cómo el lenguaje de la cocina y la gastronomía califica los espacios donde nacen y se transforman dichos textos culturales, a través de ejemplos, buscando esbozar una propuesta epistemológica del nacimiento de un lenguaje que opera su contenido a través de, independientemente de forma elegida lo que se puede ver es que la comida se comunica a través de idiomas como letras, voz, actuación, intención, publicación, identidad, subjetividad y diálogo, el proceso de interacción y comunicación de los alimentos y la mediatización de las recetas. Las sugerencias culinarias sugieren una amplia variedad discursiva presente en las recetas de los medios. Demostrando que la tecnología virtual y toda la semiosis que lo acompaña está cambiando el apego del hombre a su comida, y más que nunca la imagen de la comida se comunica más directamente con las personas que la propia comida.Pró-Reitoria de Pós-graduação da UFPB (PRPG/UFPB)A linguagem da culinária é tão atuante comunicativamente que perpassa todos os textos culturais derivados da cozinha. Propiciadora de mediações complexas, a culinária se ocupa do cozinhar, enquanto ato técnico, e do congregar e compartilhar, atos sociais. A culinária habita igualmente os dois espaços, o manuscrito e o virtual, pois se trata de uma linguagem que pode ser decodificada em diferentes sistemas da cultura: de aldeias isoladas de índios à programas de televisão, passando por blogs, redes sociais, revistas, tablets e outros ambientes de mídia. Tem-se aí uma vida, doméstica e cotidiana, privada que se mostra e se atualiza com a modernidade. Os blogs de receitas culinárias, os chamados diários virtuais, possibilitam novas formas de interação social. A partir dessas constatações, este trabalho investiga a dimensão linguístico-discursiva constitutiva das práticas de escrita de receitas culinárias que migram dos cadernos de receitas, neste trabalho chamados de manuscritos culinários, para os blogs de receitas culinárias que emergem neste contexto de produção do discurso. Dessa forma, há alguns pontos norteadores que direcionam os problemas da pesquisa: Os textos que constituem a receita culinária denotam o gênero discursivo ao qual pertencem e se organizam em suas relações sistemáticas e são encontrados, também, nesses suportes midiáticos, novos símbolos paradigmáticos do comportamento social de quem publica a receita, uma vez que os suportes apontam para um novo e ainda encoberto mundo percebido através das normas de comportamento no ambiente de trabalho profissional, social, o que faz revelar um novo percurso dessas receitas não mais restritas apenas ao mundo do lar? Esta tese caracteriza-se como documental de ordem qualitativa, pois pretende descrever e registrar práticas linguísticas evidenciando as mudanças, os mecanismos inconscientes da manifestação identitária das receitas culinárias dos blogs de receitas culinária. A tese para esta pesquisa se constrói a partir da hipótese de que as receitas culinárias dos blogs se adaptam ao tempo histórico da pós-modernidade oriundas dos manuscritos culinários tradicionais, fazendo com que o manuscrito se configure e atualize no blog, estruturando e organizando espacialidades, criando ambientes e cenários através do ciberespaço, constituindo-se assim como os manuscritos culinários, um fetiche simbólico que se formam como objetos a que se atribui poder único na busca da transmissão dos saberes culinários, representando assim, um espaço para práticas discursivas próprias de um sujeito em determinadas condições históricas. Para entender esse entrecruzamento das vozes e a interação mediada pelos suportes virtuais, é preciso levar em consideração as teorias que servem de base para essa pesquisa; a teoria da circularidade e da movência das vozes de Zumthor (1993, 1997, 2001); e a teoria das tradições discursivas na perspectiva de Kabatek (2006). Suportes teóricos estes, subsidiados por outras teorias: semiótica, multimodalidade e dos gêneros textuais. Todas necessárias para justificar que as tradições culturais e textuais podem estar agregadas nas receitas midiáticas ora pela interação virtual entre as pessoas que “navegam” e interagem nos blogs de receitas culinárias. A pesquisa não é alavancada em "colar fatos", mas, entender e perceber sua própria condição cultural. Foram utilizadas algumas estratégias de investigação e coleta de dados, tais como: seleção blogs (que já foram previamente escolhidos), sistematização do trabalho: coleta de dados, análise da representação e fidelidade das postagens, marca de gênero de quem posta, comenta e pública, autoria dos blogs e visitantes, além de outros direcionamentos de análise que foram surgindo durante o andamento da pesquisa. Metodologicamente pretende-se verificar como a linguagem da culinária e da gastronomia qualificam os espaços onde tais textos da cultura nascem e se transformam, por meio de exemplos, buscando traçar uma proposta epistemológica do nascimento de uma linguagem que opera seu conteúdo pelo meio, independentemente da forma escolhida. O que se constata é que a alimentação se comunica através de linguagens como a letra, a voz, a performance, a interação, a publicação, a identidade, subjetividade e o diálogo, o processo de interação e comunicação do alimento e a midiatização das receitas culinárias sugere uma grande variedade discursiva presente nas receitas midiáticas.
