Caracterização da dieta e consumo alimentar de zinco em idosos acompanhados por uma instituição municipal no nordeste

Resumo: Objective: The present study had as objective to evaluate the dietary intake and the dietary zinc intake in the aged accompanied in a municipal institution of a city of the interior of Sergipe. Methods: It is a transversal study carried out in the period of March 2018 with elderly people registered at the cohabitation center. A semi structured questionnaire was applied, associated with sociodemographic and lifestyle aspects and the food survey (24-hour recall). The software AVANutri Online® - Professional, 2004 version, was used to calculate the composition of the diet and for statistical analysis the SPSS program (version 20.0). Results: It was verified that 30% and 3.3% are female and male, respectively, presents the supply of zinc =5.97mg/d. The highest values of zinc (50.0%) found are in the elderly people between 60-64 years. The most accomplished meals among they, are breakfast, lunch and dinner, in which the most consumed foods are only basis of simple carbohydrates and proteins of animal origin. Conclusion: Zinc inadequacy is observed among elderly people of both sexes. They need special attention concerning the food habits, even with adequate meat and fruit consumption, the variations are minimal, where educational actions must be worked for better quality of food habits.

Métodos: Trata-se de um estudo transversal realizado no período de março de 2018 com idosos cadastrados no centro de convivência. Foi aplicado um questionário semiestruturado associado aos aspectos sóciodemográficos e estilo de vida e o inquérito alimentar (recordatório alimentar 24 horas). Utilizou-se o Software AVANutri Online® - Professional versão 2004 para cálculo da composição da dieta e para análise estatística o programa SPSS (versão 20.0). Resultados: Verificou-se que 30% e 3,3% dos idosos são do sexo feminino e masculino, respectivamente, com uma ingestão de zinco = 5,97 mg/d. Os maiores valores de zinco (50,0%) encontrados estão em idosos entre 60-64 anos. As refeições mais realizadas entre os idosos são desjejum, almoço e jantar, nos quais, os alimentos mais consumidos são a base de carboidratos simples e proteínas de origem animal. Conclusão: Observa-se inadequação de zinco entre os idosos de ambos os sexos.
