Resumo: Propolis has attracted interest in recent decades due to the various functional properties attributed to the presence of bioactive substances, which serves for improving health and preventing diseases. The aim of the present study was to determine the content of bioactive compounds present in different Brazilian propolis varieties of the state of Alagoas and Sergipe: brown (Hyptis divaricata), green (Baccharis dracunculifolia) and red (Dalbergia ecastophyllum), through different extraction methods and to obtain dried powders from the extracts of the propolis by means of the spray-drying atomization process. The content of phenolic compounds, flavonoids and antioxidant activity (DPPH, ABTS+, FRAP, ORAC) were determined in extracts and microparticles of propolis. The chromatographic profile of extracts and microparticles was obtained from the Ultra Fast Liquid Chromatography system. Using the LC-MS/MS system, in the MRM mode, the identification and quantification of the bioactive compounds present in the samples of the extracts and microparticles of the propolis were carried out. In addition, microparticles were evaluated for their morphology (SEM, particle size, XRD, FTIR), physico-chemical characterization (moisture, water activity, solubility and hygroscopicity), encapsulation efficiency and retention of bioactive compounds. The results showed that the extracts and the microparticles of propolis presented a high content of total phenolics, flavonoids and antioxidant activity. Maltodextrin and gum arabic proved to be efficient drying aid, imparting good encapsulation efficiency (70-79%). The microparticles presented spherical forms with extremely smooth surfaces, with amorphous characteristics, low water activity, humidity and hygroscopicity, high solubility and good retention of the bioactive compounds. As for the identification and quantification of the phenolic compounds present in the samples, the richness of the chemical composition is verified, which brings prespective for the use of extracts and microparticles in pharmaceutical formulations and in the elaboration of new functional foods.

Diante disso, o objetivo do presente estudo foi determinar o conteúdo de compostos bioativos presentes em diferentes variedades das própolis brasileiras do estado de Alagoas e Sergipe: marrom (Hyptis divaricata), verde (Baccharis dracunculifolia) e vermelha (Dalbergia ecastophyllum), através de diferentes métodos de extração e obter pós a partir dos extratos das própolis por meio do processo de atomização por spray-drying. Foram determinados nos extratos e nas micropartículas das própolis o conteúdo de compostos fenólicos, flavonóides e atividade antioxidante (DPPH, ABTS+ , FRAP, ORAC). O perfil cromatográfico dos extratos e das micropartículas foi obtido a partir do sistema Ultra Fast Liquid Chromatography. A partir do sistema LC-MS/MS, no modo MRM, foi realizada a identificação e quantificação dos compostos bioativos presentes nas amostras dos extratos e micropartículas das própolis. Além disso, as micropartículas foram avaliadas quanto à sua morfologia (MEV, tamanho das partículas, DRX, FTIR), caracterização (umidade, atividade de água, solubilidade e higroscopicidade), eficiência de encapsulação e retenção dos compostos bioativos. Os resultados revelaram que os extratos e as micropartículas de própolis apresentaram um alto conteúdo de fenólicos totais, flavonóides e atividade antioxidante. A maltodextrina e a goma arábica mostraram-se ser um eficiente adjuvante de secagem, conferindo uma boa eficiência de encapsulação (70-79%). As micropartículas apresentaram formas esféricas com superfícies extremamente lisas, com características amorfas, baixa atividade de água, umidade e higroscopicidade, alta solubilidade e boa retenção dos compostos bioativos.
