Resumo: | This work proposes a characterisation of the production system of a company in the rice processing industry, in addition to the inclusion of mathematical models to support decisions on the purchase of inputs and preparation of production plans. The purpose of the characterisation is to provide a better understanding of the process and enable the development of improvement actions. The proposed mathematical model, on the other hand, was designed to enable simulations of monthly production plans and support decision-making regarding the acquisition of inputs from suppliers and to optimize the production mix. The research took the form of a case study, in which the company Marzari Alimentos was analysed. The characterisation took place through on-site data collection and information was provided directly by the firm managers. At the end, the processing and packaging process was properly mapped. The mathematical model developed, nevertheless, did not directly address the technical part of processing, however it sought to represent the relevant issues to the process of data acquisition and determination of the production mix in an integrated manner, unlike most of the specialised literature. The initial model was developed only considering the addition of ingredients used in the company itself, considering a static stock of ingredients. Model 2 discretized inputs according to different sources (suppliers). Model 3 restricted the partial acquisition of inputs and Model 4 made the supply of products more flexible in accordance with current legislation. A reliable characterisation of the production system of Marzari Alimentos was obtained and, through the resolution of the developed mathematical model, production programs were simulated for comparison with programs carried out in previous periods. The results obtained in the simulation presented a likelihood of gains slightly superior to the actual obtained revenue since, with a more flexible formulations of the products, a resolution of the model presented the possibility of more rational allocation of the noble ingredients among the products. |

O objetivo da caracterização foi proporcionar melhor entendimento do processo e possibilitar o desenvolvimento de ações de melhoria. Já o modelo matemático proposto foi pensado para possibilitar simulações de planos de produção mensais e apoiar a tomada de decisão em relação a aquisição de insumos de potenciais fornecedores e otimizar o mix de produção. A pesquisa se deu na forma de um estudo de caso, no qual a empresa Marzari Alimentos foi analisada. A caracterização se deu através de coleta de dados in loco e de informações obtidas diretamente com a gerência. Ao final, o processo de beneficiamento e embalagem foi devidamente mapeado. Já o modelo matemático desenvolvido não abordou diretamente a parte técnica do beneficiamento, e sim buscou representar as questões pertinentes ao processo de aquisição de insumos e determinação de mix de produção de maneira integrada, diferentemente de grande parte da literatura especializada. O Modelo inicial foi desenvolvido apenas considerando a formulação de ingredientes utilizada na própria empresa, considerando estoque estático. O Modelo 2 discretizou os insumos de acordo com diferentes origens (fornecedores). O Modelo 3 restringiu a aquisição parcial de insumos e o Modelo 4 flexibilizou a formulação dos produtos de acordo com a legislação vigente. Foi obtida uma caracterização fidedigna do sistema produtivo da Marzari Alimentos e, por meio da resolução do modelo matemático desenvolvido, foram simulados programas de produção para comparação com programas efetuados em períodos anteriores.
